This Blueberry Cobbler recipe is a great dessert any time of the year but will become your go-to dessert in the summer when fresh berries are at their peak. I’ve been making all sorts of cobbler for years, but aside from the fillings, nothing’s really changed over that time. So I decided to mix things up and give my next cobbler a makeover. I took my classic blueberry cobbler recipe, and I added an extra layer of sweetness and crunch with my brown sugar pecan crust. It’s absolutely delicious, and it makes the perfect after-dinner treat or potluck dessert for any occasion.

Blueberry Cobbler Recipe with Brown Sugar Pecan Crust

This delicious cobbler starts with a simple blueberry filling that requires no stovetop cooking. Then, it’s topped with a wonderful, classic cobber batter. Finally, I cover the entire thing in a brown sugar pecan crust that adds even more sweetness and the earthy flavor of pecans, and I bake the whole thing to golden perfection. What I get is a cobbler that’s full of all the great flavors and textures I’ve always loved in traditional cobbler but with a little something extra to make it super special.

You sure can. Just add the same amount of frozen blueberries that you would fresh.

Why is my blueberry cobbler runny?

Runny cobbler is usually the result of extra juicy fruit or not letting the cobbler sit long enough. Cobbler has to cool a bit for the filling to thicken properly.

How do you make a cobbler thicker?

Add 1 or 2 tablespoons of cornstarch to the fruit mixture to make the filling thicker.

Can you make blueberry cobbler in advance?

You can make the filling in advance, but I don’t recommend making the full cobbler before you’re ready to serve it. It’s best when it’s fresh from the oven.

Can you freeze homemade blueberry cobbler?

It freezes very well. Cobbler will last for up to 3 months in the freezer.

How to Store and Reheat Leftover Blueberry Cobbler

Store the cobbler in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze it for up to 3 months in an airtight, freezer-safe container.

To reheat cobbler, let it come to room temperature. Then, bake it at 250 degrees until warmed through.

You’ll only need simple, basic baking ingredients to make this cobbler. Most of them are already in your kitchen, and the ones that aren’t are all readily available at your local grocery store.

Blueberry Filling

  • Fresh blueberries
  • Sugar
  • Brown sugar
  • Lemon juice
  • Cornstarch
  • Cinnamon

Classic Topping

  • All purpose flour
  • Brown sugar
  • Sugar
  • Baking powder
  • Salt
  • Butter
  • Boiling water

Brown Sugar Pecan Crust

  • Brown sugar
  • All purpose flour
  • Chopped pecans
  • Butter

How to Make This Blueberry Cobbler Recipe

Making this cobbler is very easy. It only takes a little mixing and then baking. That’s it!

Step 1: Prep

Preheat the oven to 375 degrees and spray a 3-quart baking dish with nonstick cooking spray. Set aside.

Step 2: Make the Filling

Combine the blueberries, brown sugar, lemon zest, lemon juice, and cornstarch in a large bowl and let sit for at least 10 minutes. Then, add the mixture to the prepared baking dish.

Step 3: Make the Topping

Whisk the flour, brown sugar, sugar, baking powder, and salt together in a medium bowl. Then, cut the cold butter into the flour with a pastry cutter or 2 forks until crumbly. Finally, add the boiling water and stir until combined. Spoon the mixture over the berries evenly.

Step 4: Make the Crust

Combine the crust ingredients in a small bowl. Then, spread the mixture evenly over the cobbler.

Step 5: Bake

Bake for 55 minutes. Let cool until warm, then enjoy with whipped cream or vanilla ice cream.

Ingredients
  

Blueberry Filling

  • 6 cups blueberries
  • ⅓ cup sugar
  • ⅓ cup brown sugar
  • 2 ½ tablespoon lemon juice
  • 1 tablespoon cornstarch
  • ½ teaspoon cinnamon

Cobbler Topping

  • 1 ½ cups all purpose flour
  • ⅓ cup brown sugar
  • ⅓ cup sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 stick butter, cut into small pieces
  • ⅓ cup boiling water

Brown Sugar Pecan Crust Topping

  • ¾ cup brown sugar
  • ¼ cup all purpose flour
  • ¾ cup chopped pecans
  • ¼ cup butter melted

Instructions
 

  • Preheat oven to 375° and spray 3 quart baking dish with non-stick cooking spray. Set aside.

Blueberry Filling

  • Rinse blueberries and place in a large bowl.
  • Sprinkle sugar, brown sugar, lemon juice, cornstarch and cinnamon over blueberries. Stir gently and let sit for 10 minutes while preparing the flour mixture.
  • Pour blueberries into prepared baking dish.

Cobbler Topping

  • In a medium bowl, whisk flour, brown sugar, sugar, baking powder and salt together until combined.
  • Using a pastry blender, or two forks, mix butter into flour mixture until crumbly.
  • Pour boiling water into flour mixture. Stir until combined.
  • Spoon topping mixture over blueberries and gently spread making sure to cover the blueberries completely.

Brown Sugar Pecan Crust Topping

  • In a small bowl add all the brown sugar pecan crust ingredients. Stir to combine.
  • Spoon brown sugar pecan mixture evenly over cobbler topping.
  • Bake for 55 minutes.
  • Serve warm with a scoop of vanilla ice cream or whipped topping and enjoy.

    In the directions of the recipe, it says baking soda so that was why I questioned it
