Sheet Pan Chicken and Sausage with Potatoes

This sheet pan chicken and sausage is a quick, easy, hearty, delicious meal perfect for busy weeknights. Bite-size pieces of chicken, smoky sausage, zesty seasonings, and colorful veggies are oven roasted, and the flavor combination is simply irresistible.

When you’re a busy mom, you learn the value of quick and easy meals. Before I had kids, I didn’t really think about how much prep or work a recipe was. If it looked good, I made it. After I had kids, though… well, that was another story. When I discovered sheet pan cooking, I couldn’t believe how easy it was. I made tons of sheet pan recipes after that. They’re just so fast and simple, and they can feed an entire family! When my kids lived at home, I made sheet pan dinners all the time because they were great for evening dinner and after-school leftovers the next day. Now that the kids are grown, I still make these kinds of dinners for my guy and me routinely because even though the kids are gone, I have things to do!

Sheet Pan Chicken and Sausage

This recipe starts with cubed chicken, smoked sausage, red potatoes, bell pepper, and onion. I toss them with olive oil and seasonings, then bake them until the chicken is cooked through and the vegetables are tender. The entire process only takes about an hour, and when it’s all done, I have a delicious, hearty meal everyone loves that won’t keep me in the kitchen for a long time. Everyone wins!

Making this sheet pan recipe is even easier than gathering up the ingredients. Just a few minutes of prep and a little baking are all it takes to make this super easy recipe.

Step 1: Prep

Preheat the oven to 400 degrees and line a baking sheet with foil. Set aside.

Step 2: Season the Ingredients

Add the chicken, potatoes, and 1 tablespoon of olive oil to a large bowl and toss to coat. Then, add the seasonings and toss again. Add the bell pepper and onion, then stir. Finally, add the sliced sausage and the rest of the oil and stir again to evenly coat all the ingredients.

Step 3: Bake

Spread the mixture evenly in a single layer on the lined baking sheet. Bake for 40 to 45 minutes until the potatoes are tender and enjoy!

Ingredients
  

  • (2) 12 ounce beef smoked sausage, sliced
  • 2 chicken breasts, cut into bite-size pieces
  • 5 red potatoes, diced into bite-size pieces
  • 2 green bell pepper, cut into bite-size pieces
  • 1 medium yellow onion, cut into bite-size pieces
  • 2 teaspoons Slap Ya Mama seasoning
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 2 tablespoons olive oil

Instructions
 

  • Preheat the oven to 400 degrees and line a large baking sheet, or two regular baking sheets, with aluminum foil. Set aside.
  • In a large bowl, add the chicken and potatoes, and 1 tablespoon of olive oil. Toss to coat.
  • Sprinkle all the seasonings over the chicken and potatoes, toss.
  • Add bell pepper and onion. Stir.
  • Next add sliced sausage and remaining tablespoon of oil. Stir to coat.
  • Place mixture on the prepared baking sheet(s) and spread out in a single layer.
  • Bake for 40-50 minutes, or until the potatoes are tender.
  • Remove from the oven and enjoy with a side salad and crusty bread.
