Fried Italian Sausage Scramble Breakfast Burritos

These fried Italian sausage scramble breakfast burritos are loaded with Italian sausage, potatoes, eggs and gobs of cheese and are perfect when breakfast needs to be eaten on the go. Plus, these breakfast burritos are super easy to make and will be gobbled up in no time.

Imagine biting into the crispy tortilla, and then tasting the various delicious flavors of the sausage, potatoes and fluffy eggs. Super delish!

This recipe is from my One Skillet Italian Sausage Scramble. I made the Italian sausage scramble the morning before and then made these fried Italian sausage scrambled breakfast burritos the next morning. Two great breakfast meals out of one! All you have to do is peel and cut up potatoes, throw them in a frying pan, add Italian sausage, onions, pepper and garlic salt. Cook until the sausage is thoroughly cooked and potatoes are soft. Then add the eggs and milk mixture into the pan, scramble until done. Top with grated cheese and let melt. Heat up each tortilla on the stove, add a couple spoonfuls of sausage/egg mixture into the center of each tortilla, roll up and place into another frying pan. Fry until golden brown on both sides. Top with additional cheese and enjoy!

Ingredients
  

  • 1 lb hot Italian sausage
  • ½ large onion chopped
  • 5 small potatoes peeled and sliced into small thin cubes
  • 1 tsp pepper
  • 1 Tbs garlic salt
  • 2 Tbs vegetable oil
  • 15 eggs whisked
  • ¼ cup milk
  • 3 cups Colby jack cheese grated
  • 12 flour tortillas
  • ½ - ¾ cup vegetable oil for frying
  • Optional: sliced green onions for topping

Instructions
 

  • In a large frying pan, add oil and heat over medium heat (after potatoes are peeled).
  • Peel and thinly slice potatoes into small thin cubes, add to pan.
  • Remove sausage from casing and cut lengthwise, then cut into small pieces, add to pan.
  • Sprinkle with pepper and garlic salt.
  • Cook over medium heat stirring occasionally until potatoes are soft and sausage is thoroughly cooked.
  • Add eggs and milk to a medium bowl, whisk until blended and add to sausage mixture.
  • Stir to mix and then cook eggs until scrambled to desired consistently.
  • Turn off heat, add cheese to melt then top with sliced green onions.
  • In another frying pan, heat oil over low/medium flame.
  • Heat up each tortilla on the stove over low flame and then spoon scrambled egg/sausage mixture to the middle of each one, roll up and place into the hot oil.
  • Fry until golden brown on both sides.
  • Remove from pan and place on plate lined with paper towels.
  • Let cool for a few minutes then enjoy!
