How to Make Chocolate Cream Pie

Making this pie is much easier than you’d think. It only takes a little bit of stovetop cooking, chilling, and whipping. There’s really nothing to it, and you’ll be in and out of the kitchen in just a few minutes. The longest part of the recipe is letting the pie chill. It’s that easy!

Step 1: Make Whipped Cream for the Pie Filling

Whip the heavy cream with a hand mixer until stiff peaks form. Then, cover the bowl with plastic wrap and chill while you make the rest of the filling.

Step 2: Make the Chocolate Cream

Whisk the eggs, sugar, and water in a large glass bowl. Then, place the bowl over a medium saucepan with 1 to 2 inches of lightly simmering water, making sure the water doesn’t touch the bowl. Beat the egg mixture with a hand mixer on low-medium speed until thickened – about 10 to 12 minutes. Then, remove the bowl from the heat and continue beating for 8 to 10 more minutes until thick, fluffy, and cooled. Add cooled, melted chocolate and vanilla to the mixture and beat until well mixed. Finally, beat in the butter pieces until completely incorporated.

Step 3: Add Whipped Cream

Gently fold in the chilled whipped cream until fully combined and no streaks of whipped cream are visible.

Step 4: Fill and Chill

Pour the filling into the pie crust, smooth it out into an even layer, cover, and chill for at least 3 hours to set. Overnight is better.

Step 5: Make the Whipped Cream

When the pie is chilled, beat the heavy cream, sugar, and vanilla with a hand mixer until they are fully combined and stiff peaks form.

Step 6: Top

Spread the whipped cream evenly over the pie and pipe dollops of whipped cream around the edge of the pie. Top the dollops with Oreo pieces and sprinkle chocolate shavings over the pie. Enjoy!

Recipe Tips

  • Be sure your water is only slightly simmering, and it never touches the bottom of the bowl. This keeps the egg mixture from scrambling.
  • Remove the egg mixture from the heat as soon as it begins to thicken. If the custard mixture gets too hot, it will become runny.
  • 3 hours is the minimum chilling time for this pie. Overnight is optimal.
  • Stop beating your whipped cream as soon as stiff peaks form. If you beat it too much, it will actually beat the air out of the cream and cause it to deflate.

Variations

  • Omit the chocolate for vanilla cream.
  • Omit the chocolate and add various extracts to create different cream fillings.
  • You can use a graham cracker crust for this recipe or any variations you choose.
  • Use milk, semi-sweet, or dark chocolate to create different chocolate intensities for the cream filling.

What to Serve with Chocolate Cream Pie

Serve this pie with some milk for the kids or a cup of coffee or tea for the adults. It’s also wonderful paired with fresh fruit.

I love chocolate mousse. It’s not a dessert I get to indulge in often but this recipe was such a hit, I’m going to have to make it again soon. So light and airy!
