This Stuffed Bell Pepper Casserole is so simple to make and is an easy recipe. It’s one of those comforting and easy weeknight meals that you can whip up and have hot and ready on the table in no time at all!

Stuffed Bell Pepper Casserole is full of ground beef, bell pepper, rice, seasonings and cheese.

This just might be one of my favorite weeknight dinners. I love the fact that it takes minimal prep work but produces the best tastes every single time. (and don’t worry, I make this delicious dish on the weekends as well!) And if you’re wanting my opinion, this recipe tastes great when it’s made fresh but it’s also really good for leftovers, too. It’s safe to say that I can easily snack on this for several days after I made it with no issues at all.

Could you use ground turkey in this recipe instead of ground beef?

Absolutely! If you’re wanting to cut down on some of the grease factor and fat grams as well. using ground turkey is always a good choice. It’s cooked up basically the same way and it packs on a ton of taste and flavor, too.

Stuffed Bell Pepper Casserole is loaded with two types of cheese, hamburger, rice and peppers.

What happens if I don’t have beef broth to add to this recipe?

If you check your cabinets and find that you don’t have any beef broth, you can substitute in a chicken broth or even vegetable broth if you have it. Just don’t stress. Any real type of liquid will work. I just prefer to use the beef broth since I make this recipe with ground beef. It goes together well and keeps the meat from drying out.

Can you make this recipe spicy?

If you want to add a little bit of heat to this recipe, go for it! However, remember that not everyone eating it likes spice. If I were you, consider thinking about adding some hot elements to your own plate or bowl after this Stuffed Bell Pepper Casserole is cooked. That way you can enjoy the heat and everyone else can eat it as it was written.

Ingredients Needed To Make Stuffed Bell Pepper Casserole

  • Ground beef
  • Green bell peppers
  • Onions, garlic
  • Diced tomatoes
  • White rice
  • Beef broth
  • Worcestershire sauce
  • Seasoning, pepper, red pepper flakes
  • Cheddar cheese, Pepper Jack cheese

How To Make Stuffed Bell Pepper Casserole

  • Preheat oven to 350 degrees and spray a 3 quart baking dish with non-stick cooking spray.
  • In a large frying pan, over medium high heat, add ground beef, onions, bell peppers, garlic, seasoning, pepper and red pepper flakes.
  • Cook until ground beef is no longer pink and onions and peppers are soft. Drain and add to prepared baking dish.
  • Add Worcestershire sauce, diced tomatoes, uncooked rice and beef broth, stir.
  • Cover with a lid or aluminum foil and bake until rice is tender, about an hour.
  • Remove from oven, top with shredded cheese, place back in the oven uncovered and bake for an additional 5-10 minutes or until cheese has melted and is bubbly. Serve & salt and pepper to taste.

How do you reheat this leftover casserole?

If you happen to have some leftovers, you’re lucky! I said it earlier and I’ll say it again…this recipe tastes so good as leftovers! One simple way to reheat it is to use your microwave and zap it for about 30 seconds. Another simple way to reheat this leftover casserole is that you can heat it up slowly in your oven as well.

The main thing to keep in mind when you’re reheating this dish is that you don’t want to overheat it. This causes the meat to dry out and that’s the last thing that you want.

Can you add any toppings to this casserole?

This is where this dish could take on a whole new taste. Typically, casseroles are all about what’s contained inside and dish, but who says that you can’t add a few fun toppings on top? Give your tastebuds a treat and pile on some additional toppings. You can add on extra cheese, diced onions, tomatoes and even a little bit of sour cream as well.

If you want to add some delicious toppings to your portion, do so! You’re the one that’s going to be eating it and enjoying it!

  • 1 ½ lbs ground beef
  • 2 green bell peppers, diced
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 1 tsp Cajon seasoning
  • ½ tsp pepper
