Pink Dessert

Now I know it’s just about the start of the summer season but every Christmas my mom whips up this dessert because everyone always requests her “Pink Dessert.” I tried to think of a different name for this recipe but after calling it pink dessert forever, there was not another name that seemed fitting for this delicious pink fluff! It’s actually a great anytime, any season, dessert but family traditions in our house seem to focus around Christmas if you can believe that!

This dessert is light, fluffy and loaded with cherries, walnut, pineapples and marshmallows. There are a lot of different variations out there for this type of dessert so I decided to share our version, my mom’s version, with all of you!

This is a very light and refreshing treat! All ages seem to enjoy the tastiness of this pink dessert. It’s usually one of the first things finished off everyone’s plate at our Christmas dinner. It seems so weird writing about how we eat this at Christmas time when I’m posting it now, in Spring, right before the beginning of summer. But like I said, this pink dessert is great to enjoy anytime, and during any season!

Doesn’t this just look so fluffy! My Mom told me it’s all in the mixing! 10 minutes is a long time to beat cool whip and condensed milk, but 10 minutes it is!

We love this fluff! So tasty, so light, so delicious! Make sure to drain your crushed pineapple. Too much liquid will make this too watery.

Ingredients
  

  • 16 oz container of cool whip
  • 12 oz can condensed milk
  • 1 cup crushed pineapple drained
  • 1 cup mini marshmallows
  • 1 cup chopped walnut or pecans
  • 20 oz can cherry pie filling

Instructions
 

  • In a medium mixing bowl, beat cool whip and condensed milk together for 10 minutes.
  • Gently fold in remaining ingredients until well coated.
  • Cover and refrigerate until set.
  • Serve chilled. The colder the better.
