How to Make Bluebery Cream Cheese Bites

- Add the blueberries and sugar to a small saucepan. Then, mix the cornstarch slurry and add it to the pan. Cook on low until thickened and cool.
- Beat the cream cheese until fluffy. Then, add the remaining cream cheese filling ingredients and beat until combined.
- Unroll the dough onto a lightly floured surface and cut each circle into 16 pieces.
- Spread the cream cheese over each cut pie round. Then, add the blueberry sauce on top.
- Roll each triangle up, starting at the wide end, placing the rolls on two prepared baking sheets as you go.
- Bake at 375F until golden brown. Then, cool for a few minutes, dust with powdered sugar, and enjoy!

Blueberry Cream Cheese Bites
Ingredients
- 1 box Pillsbury pie crust, room temperature
The Blueberry Filling
- 2 cups fresh blueberries
- ½ cup sugar
- 6 Tbsp water
- 3 Tbsp corn starch
For The Cream Cheese Filling
- 8 oz cream cheese, room temperature
- ½ cup sugar
- 1 egg yolk
- 1 tsp lemon juice
- 1 tsp vanilla
Instructions
- Preheat oven to 375° and spray 2 baking sheets with a non stick spray or line with parchment paper.
For The Blueberry Filling
- In a small saucepan, add blueberries and sugar. Stir.
- In a small mixing bowl, mix water and corn starch until combined then add to blueberry mixture.
- Cook on low for 5-7 minutes until blueberry mixture has thicken. Set aside to cool.
For The Cream Cheese Filling
- In a medium mixing bowl, beat cream cheese with an electric mixer until fluffy, about 2-3 minutes.
- Add sugar, egg, vanilla and lemon juice and beat for an additional 2 minutes.
Making The Bites
- Unroll pie dough on a lightly floured cutting board. Using a pizza cutter, cut each pie dough into 16 pieces like a pizza. Leave each piece in place.
- Spread cream cheese mixture over each pie dough and then add blueberry sauce on top.
- Take one small piece at a time, roll from the outside edge towards the center of the pie dough (this will be messy but the end results are so good).
- Continue rolling each blueberry bite and place on baking sheets. Repeat process with second pie dough.
- Place both baking sheets in the oven for 20-22 minutes, or until golden brown.
- Remove from oven, let cool for a few minutes, dust with powdered sugar or drizzle with a glaze over each of the bites.

Hi Tim, yes both of those would work. For the strawberries, I’d probably do the same as the blueberries and for the peaches, I’d cut them in small chunks. I will make both of them fairly soon.
Great recipe. I just used the crescent rolls though, rather than cutting the pie dough into crescents. It was easier and saved time
