Key Ingredients

I’ve listed the most important ingredients here, but you can find the complete list and exact amounts in the recipe card at the end of the post.

  • Refrigerated Pie Crust: pre-made pie crust gives the bites a golden, buttery flavor and texture, and it saves so much time.
  • Blueberries: I recommend fresh blueberries for this recipe for a nice pop of flavor and no extra moisture.
  • Cream Cheese: Cream cheese and a scant few other ingredients create a sweet and tangy filling that pairs so well with the blueberry flavor.

Variations

  • Puff Pastry: Use puff pastry dough to create a blueberry cream cheese puff pastry variation.
  • Fruity Filling: Use different fruits to create variations like these rapsberry cream cheese bites, as well as strawberry, blackberry, or raspberry combinations.
  • Pie Filling: Use pie filling to make quick and easy versions with your favorite fruit flavors.

How to Make Bluebery Cream Cheese Bites

I’ve included a brief oveview of the recipe here, but you can find the complete version in the recipe card at the bottom of the post.

  1. Add the blueberries and sugar to a small saucepan. Then, mix the cornstarch slurry and add it to the pan. Cook on low until thickened and cool.
  2. Beat the cream cheese until fluffy. Then, add the remaining cream cheese filling ingredients and beat until combined.
  3. Unroll the dough onto a lightly floured surface and cut each circle into 16 pieces.
  4. Spread the cream cheese over each cut pie round. Then, add the blueberry sauce on top.
  5. Roll each triangle up, starting at the wide end, placing the rolls on two prepared baking sheets as you go.
  6. Bake at 375F until golden brown. Then, cool for a few minutes, dust with powdered sugar, and enjoy!

Expert Tips

  • Mix the cornstarch and water before adding it to the blueberry mixture to ensure even blending and thickening.
  • If you choose to use frozen blueberries, reduce the water in the filling to 2 tablespoons.
  • The easiest way to cut your dough into uniform slices is to use a pizza cutter and cut it as you would a pizza.
  • Let the bites cool on the baking sheets for a few minutes before serving to ensure the filling has set properly.

Blueberry Cream Cheese Bites FAQs

Does cream cheese go with blueberries?

Absolutely! The sweet flavor of blueberries is perfect with the tangy flavor and rich texture of cream cheese.

How long will blueberry cream cheese bites last?

These bites will last for up to four days when refrigerated in an airtight container.

Do I have to refrigerate blueberry cream cheese bites?

Yes. Because they have a cream cheese filling, these bites must be refrigerated for freshness, flavor, and food safety.

Ingredients

  • 1 box Pillsbury pie crust, room temperature

The Blueberry Filling

  • 2 cups fresh blueberries
  • ½ cup sugar
  • 6 Tbsp water
  • 3 Tbsp corn starch

For The Cream Cheese Filling

  • 8 oz cream cheese, room temperature
  • ½ cup sugar
  • 1 egg yolk
  • 1 tsp lemon juice
  • 1 tsp vanilla

Instructions

  • Preheat oven to 375° and spray 2 baking sheets with a non stick spray or line with parchment paper.

For The Blueberry Filling

  • In a small saucepan, add blueberries and sugar. Stir.
  • In a small mixing bowl, mix water and corn starch until combined then add to blueberry mixture.
  • Cook on low for 5-7 minutes until blueberry mixture has thicken. Set aside to cool.

For The Cream Cheese Filling

  • In a medium mixing bowl, beat cream cheese with an electric mixer until fluffy, about 2-3 minutes.
  • Add sugar, egg, vanilla and lemon juice and beat for an additional 2 minutes.

Making The Bites

  • Unroll pie dough on a lightly floured cutting board. Using a pizza cutter, cut each pie dough into 16 pieces like a pizza. Leave each piece in place.
  • Spread cream cheese mixture over each pie dough and then add blueberry sauce on top.
  • Take one small piece at a time, roll from the outside edge towards the center of the pie dough (this will be messy but the end results are so good).
  • Continue rolling each blueberry bite and place on baking sheets. Repeat process with second pie dough.
  • Place both baking sheets in the oven for 20-22 minutes, or until golden brown.
  • Remove from oven, let cool for a few minutes, dust with powdered sugar or drizzle with a glaze over each of the bites.

Notes

Tips
  • Mix the cornstarch and water before adding it to the blueberry mixture to ensure even blending and thickening.
  • The easiest way to cut your dough into uniform slices is to use a pizza cutter and cut it as you would a pizza.
  • Let the bites cool on the baking sheets for a few minutes before serving to ensure the filling has set properly.

This looks really yummy! Have you ever used puff pastry instead of pie dough? I’m thinking it might add a wonderful flakiness. Thoughts?

        Good morning Karen,

Hi Karen, Great question. Yes, I have. I actually have a few posts that you might like where I have used puff pastry. Just type in “puff pastries” in the search bar on my blog and they should pop right up. That you for your comment.

Wow Blueberry Cream Bites look delicious. Could you come up with low-carb pie crust using coconut flour?

Can & how could u do this with strawberries or peaches

      • Great Grub, Delicious Treats

        February 15, 2020 at 8:06 am

Hi Tim, yes both of those would work. For the strawberries, I’d probably do the same as the blueberries and for the peaches, I’d cut them in small chunks. I will make both of them fairly soon.

Great recipe. I just used the crescent rolls though, rather than cutting the pie dough into crescents. It was easier and saved time
