Sausage and potato skillet is a hearty and flavorful dish that is the perfect weeknight or casual dinner recipe and is easy to make. The smoky flavor of the smoked sausage pairs perfectly with the tender potatoes.

This easy, delicious recipe has been a favorite of my family. I started making this sausage and potato recipe several years ago, and I’ve never looked back. It’s hearty, flavorful, and so easy to make, so everyone in the house loves it. I love the ease, and we all love the flavor. The best part is that the leftovers might just be even better! This has been a staple of dinner in my home since the kids were in high school, and even now that they’re off on their own, I still make this for myself and my guy. We love it when it’s fresh from the skillet, and we love it even more the next day after the flavors have had time to really meld. You’re going to love it, too!

Sausage and Potato Skillet

This delicious one-pot meal starts with sliced smoked sausage that’s browned to perfection. Then, I add the veggies and cook until they’re softened. Finally, I add diced potatoes, creamy soup, and seasonings, and simmer until everything is tender and delicious! After that, I just serve it over rice, pasta, or mashed potatoes and watch it disappear! It’s a hearty dish that’s super easy to make and will satisfy even the biggest eaters.

  • Olive oil
  • Smoked sausage
  • Onion
  • Cloves garlic
  • Diced tomatoes
  • Cream of mushroom soup
  • Dried parsley
  • Slap Ya Mama seasoning
  • Salt
  • Black pepper
  • Red pepper flakes
  • Potatoes: Russet, Yukon gold, baby gold potatoes

How to Make This Sausage and Potato Skillet

Making this skillet is a breeze. It only takes a few minutes, a few simple steps, and ONE skillet! It doesn’t get better than that, folks.

Step 1: Cook the Sausage and Onions

Heat olive oil in a large skillet over medium heat. Add the sliced smoked sausage and brown it on both sides. Then, add the onions and garlic and cook until the onions are translucent and softened – about 5 minutes.

Step 2: Add the Remaining Ingredients

Stir in the potatoes, diced tomatoes, cream of mushroom soup, water, parsley, and seasonings and stir.

Step 3: Simmer

Bring to a boil, then reduce the heat and simmer for 15 to 20 minutes until the potatoes are fork-tender. Enjoy over rice, pasta, or mashed potatoes.

  • Slice your sausage into bite-size pieces that are slightly thick.
  • Dice your potatoes small but not too small. They should be the same size as the sausage.
  • It’s important that you simmer the potatoes, not boil them.

The oil at the beginning serves to keep them from sticking until the fat inside them begins to render. You can use water as well. Just add a quarter cup of water and cook until the water evaporates and the sausage is browned on both sides.

What type of sausage should I use?

You can use your favorite brand and variety of smoked sausage for this recipe. They all work!

Can you make sausage and potato skillet in advance?

You can absolutely make this recipe in advance. It’s even better the next day, and it’s super easy to reheat.

How to Store, Reheat, and Freeze Leftover Sausage Potato Skillet

Place in the refrigerator for up to 4 days in an airtight container. For longer storage, you can freeze it for up to 3 months in an airtight, freezer-safe container.

To reheat the sausage potato skillet, place it in a saucepan over medium-low heat and cook until heated through.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 1 onion, diced

  • 14.5 ounce can diced tomatoes
  • 10.5 ounce can condensed cream of mushroom soup
  • 1 cup water
  • 2 teaspoons dried parsley

Instructions
 

  • Heat olive oil in a large cast iron skillet or large frying pan over medium heat.
  • Add smoked sausage and cook until browned on all sides.
  • Next, add the onions and garlic and cook until the onions are translucent and softened, about 5 minutes.
  • Stir in the potatoes, diced tomatoes, cream of mushroom soup, water, parsley, and all the seasonings. Stir.
  • Bring to a boil, then reduce to low and simmer for 15-20 minutes, or until the potatoes are fork tender.
  • Serve hot over rice, if desired.

    I’ve tried a similar recipe without tomatoes that was good. I’m sure adding tomatoes will be even better. Can’t wait to try it.
