Key Ingredients

I’ve listed the ingredients that really make this roast pop right here, but you’ll find a complete list, along with amounts, in the recipe card at the end of the post.

  • Chuck Roast: A quality chuck roast with plenty of marbling creates super-tender beef.
  • Soups: A blend of crema of mushroom soup and onion soup mix creates a rich gravy base for the secret ingredient in this recipe.
  • Salsa: Spicy salsa adds a ton of flavor and a kick of heat to the roast.
  • Evaporated Milk: Evaporated milk makes the potatoes extra rich and creamy.
  • Cream Cheese: Cream cheese adds a luxurious teture and a tangy flavor to the potatoes.

Variations

  • Mild: Use mild salsa for a version with far less heat.
  • Chuck Roast: The flavors in this dish work well with chuck roast, pork roast, and other beef roast varieties such as brisket, blade roast, 7-bone roast, and arm roast.
  • Add Veggies: Add carrots, potatoes, celery, and mushrooms for a classic version.
  • Serve Over Rice: Add some veggies and cook up some rice to make a crock pot chuck roast over rice version.

  • Set the crock pot to high while adding the ingredients to heat it up quickly and cut down on cooking time.
  • Dice the potatoes into 1-inch cubes so they cook quickly and evenly.
  • Drain the potatoes as soon as they’re done to avoid sogginess.
  • Bring the butter and cream cheese to room temperature before mixing them into the potatoes.

Crock Pot Chuck Roast with Mashed Potatoes FAQs

What can you use in place of chuck roast for slow cooking?

Tough cuts requiring long cooking times such as brisket, blade roast, 7-bone roast, or arm roast are all excellent replacements for chuck roast.

How do you pick a good chuck roast for pot roast?

When choosing a chuck roast for this crock pot chuck roast with mashed potatoes, look for one with deep red color and bright white marbling. This indicates freshness. While sufficient marbling is vital for tenderness and flavor, avoid roasts with large, thick chunks or strips of fat, as these create a greasy dish.

Can you overcook crock pot chuck roast?

You can overcook chuck roast in a crock pot, but it’s exceedingly difficult to do. While a chuck roast can be cooked for upwards of 12 hours on low, even with enough liquid in the slow cooker, overcooking can lead to tough, woody meat rather than tedner, fall-apart texture. That being said, you would have to actually forget your roast was in the slow cooker to come close to this.
