These mini pancake sausage bites are a delicious kid-friendly breakfast recipe made with two breakfast favorites into one bite-size treat.

Some people say that breakfast is the most important meal of the day. Some people say that’s a myth. I say that either way, it’s certainly the most delicious meal of the day! I love all the traditional flavors of breakfast, and I love to do fun, interesting things with them. That’s why I love making these pancake sausage bites. They combine two classic breakfast flavors into one delicious treat that people cannot stop eating.

Mini Pancake Sausage Bites

These delicious bites start with sausage links that I cook until they’re crispy and delicious. Then, I cut them into pieces and dip them into a simple buttermilk pancake batter. After that, they’re deep-fried in hot oil until the batter is crispy on the outside and soft and fluffy on the inside. And let’s not forget that center of perfectly cooked breakfast sausage! When it’s all done, I have little bites that are an entire breakfast in every bite.

Mini Pancake Sausage Bites Ingredients

This recipe uses a handful of simple ingredients that you can find in any grocery store anywhere in the country. You’ll have everything you need in no time.

  • All purpose flour
  • Granulated sugar
  • Baking soda
  • Salt
  • Baking powder
  • Large egg
  • Buttermilk
  • Johnsonville breakfast sausage links, or your favorite brand
  • Powdered sugar and maple syrup, if desired
  • Vegetable oil, for frying

How to Make Mini Pancake Sausage Bites

Making these delicious bites is quick and easy. It only takes a few minutes and a few simple steps, and you’ll be all done.

Step 1: Cook the Sausage

Cook the sausage until crispy on the outside and done on the inside and place the links on a plate lined with paper towels. Then, cut the links into 3 pieces. Set aside.

Step 2: Make the Pancake Batter

Whisk the flour, sugar, baking soda, salt, and baking powder in a medium bowl and set aside. Then, whisk the egg and buttermilk together in a small bowl. Pour the wet ingredients into the dry and gently mix until just combined. The batter will be lumpy.

Step 3: Dip and Fry

Heat oil over medium-high heat until hot. Then, dip each piece of sausage into the pancake batter and add a few pieces at a time to the hot oil. Deep fry until golden brown on all sides, then transfer the bites with a slotted spoon toa plate lined with paper towels. Repeat until all bites are fried.

Step 4: Serve

Serve with powdered sugar and maple syrup.

Recipe Tips

  • Mix the pancake batter just until combined. Lumpy batter is perfect.
  • Don’t crowd your pan when frying. You want the oil to stay nice and hot.
  • Be sure you cook your sausage thoroughly. The frying process is about cooking the pancake batter, not the sausage inside of it.

  • Try using bacon or Canadian bacon in place of sausage for pancake ham or bacon bites.

To begin, make sure your oil is hot enough – 350 to 375 degrees. Next, don’t crowd the oil. Only fry a few at a time to keep the oil hot. This causes the batter to crisp on the outside immediately, keeping the oil from soaking into the batter. Finally, transfer your fried food immediately to a plate lined with paper towels to absorb excess oil and prevent fogginess.

Can you freeze leftover pancake sausage bites?

Yes, you can! They freeze very well and will last for up to 3 months in the freezer.

How to Store and Reheat Leftover Mini Pancake Sausage Bites

Refrigerate these bites in an airtight container for up to 3 days. For longer storage, you can freeze them in an airtight, freezer-safe container or heavy-duty freezer bag for up to 3 months.

To reheat, place the bites on a baking sheet, cover with foil, and bake at 350 for about 15 minutes or until heated through.

Ingredients
  

  • 1 cup all purpose flour
  • 1 tablespoon sugar

  • Pour wet ingredients into dry ingredients and stir gently. Batter will be lumpy.
  • In a large saucepan, heat oil over medium high heat.
  • Dip each piece of sausage into the pancake batter and add a few at a time into the hot oil.
  • Deep fry until golden brown on all sides, remove with a slotted spoon and place on a plate lined with paper towels. Repeat until all the sausage is used.
  • Serve hot with powdered sugar and maple syrup.

    These were such a hit with my family of 7 (five children ages 6-16)! These yummy sausage pancake bites remind us of our favorite breakfast item from a well-known, restaurant (hint – McGriddles!)
