Strawberry Blueberry Parfaits

These strawberry blueberry parfaits are a quick and easy refreshing dessert that everyone will love. Fresh strawberries and blueberries are layered with homemade whipped cream and topped with granola to create a simple, decadent dessert that’s perfect for the summertime.

I don’t know about you, but I’m a sucker for a parfait. No matter when I last ate or how much I ate, if someone offers me a parfait my answer will always be a resounding yes. They’re just so delicious and they really feel like summertime to me. That’s why I love making them as much as I love eating them. They’re also super easy to make which is a big bonus, especially if I’m making them for a get-together. I’m in and out of the kitchen fast, which means I get to spend more time with family and friends and still offer them something that’s just so darn good!

Easy Berry Parfaits

These berry parfaits are where it’s at! All it takes are some fresh strawberries and blueberries, a scant handful of ingredients for the whipped cream, some granola, and cups. That’s all you need to create a dessert that is fast, simple, and oh, so good. 

This recipe uses homemade whipped cream to add an extra layer of richness that really cannot be beaten, especially when it’s paired with fresh diced and pureed strawberries and blueberries. It’s a great dessert to enjoy in the evening when the sun is getting low and the temperature is cooling off just a bit. I love eating one while I sit on the back porch. That is, of course, in addition to eating one at practically any other time! 

I’ve been making parfaits for years, but these are my favorite variation by far. Their ease makes it a simple endeavor to prepare, and the fresh fruit is the perfect counterpoint to the whipped cream. It’s a rich, sweet dessert that somehow seems to still feel light. That’s why I’m so glad you’re here reading this. I can’t wait for you to try it!

Tips

There isn’t much to this recipe, and as such, there aren’t a lot of tips. It’s one of the most straightforward recipes you’ll find. In fact, it’s so simple that I only have one tip to share about this recipe. It’s an easy one that’s also so important, so don’t skip it!

Whip Your Cream Thoroughly

That’s the one tip I have for this recipe. Whip your cream thoroughly. Many people don’t understand what stiff peaks mean when they read that term. I’ve seen so many whip their whipped cream until they get peaks but not stiff peaks. Stiff is the keyword here. So what are stiff peaks?

“Stiff peaks” means that when you dip a spoon into the whipped cream and pull it out, it creates a peak that stays in place. If your peak immediately begins to recede back into the whipped cream, then you need to whip it more. That’s my only tip!

Variations

In addition to how quick and delicious this recipe is, you’ll love how versatile it is. You can easily change this recipe up to make it into any fruity layered dessert you like. It’s the perfect canvas to experiment with! A few tiny tweaks will give you a completely different recipe. Now, isn’t that fun?

Use Different Fruits

This is a strawberry blueberry parfait recipe, but you can use any fruit you like. Blackberries and raspberries work very well in this dish. Peaches would be wonderful, as well. You could even cook down apples in the same way that you would for apple pie and use them in this recipe. The sky’s the limit!

Use Different Toppings

I love using classic granola as the topping for these berry parfaits, but you could go with other toppings if you want. Roasted nuts would taste wonderful as a topper. You could even combine some nuts and granola for an even more substantial topping. 

Whipped Topping Saves Time

I love to use homemade whipped cream with this recipe, but if you’re short on time or just don’t like making whipped cream, whipped topping will absolutely work. It’s a simple switch that won’t affect the recipe in any way. You can even change it up and add Greek yogurt to make a yogurt parfait.

Serving Strawberry Blueberry Parfaits

All you need to serve these berry parfaits is a spoon! They don’t need any extra toppings of any kind. Just take out a cup, or a parfait glass, and a spoon and let your guests enjoy! These berry parfaits are the perfect snack for any time of the week. They’re also perfect to offer family and friends and summer get-togethers. If there’s ever a time when you’re entertaining, these parfaits are a welcome treat. 

Storing Berry Parfaits

If you’re using homemade whipped cream that isn’t stabilized, you’ll have to serve them immediately and be sure they’re finished the same day. Whipped cream that isn’t stabilized doesn’t last long. However, if you made your recipe with stabilized whipped cream or if you used whipped topping, these berry parfaits will keep well in the refrigerator for up to four days. 

While you can freeze berries and whipped cream, I don’t recommend trying to freeze these parfaits. I tried it once, and when they defrosted, they were a bit… off, I guess is the best word. The berries and puree released too much liquid when they defrosted and the entire parfait became kind of soupy. It’s not good. Don’t do it.

These strawberry blueberry parfaits are ridiculously easy to make, and if you make them with whipped topping they’re even faster. You’ll be in and out of the kitchen in no time, and you’ll have one of the easiest, tastiest desserts you’ve ever made! I can’t get enough of these tasty parfaits, and neither can my family and friends. I know that once you make them, you’ll feel the same way.

Parfait Ingredients

  • Fresh strawberries
  • Fresh blueberries
  • Heavy cream
  • Sugar
  • Vanilla extract
  • Granola

How To Make Strawberry Blueberry Parfaits

  1. To make the whipped cream, add heavy cream, sugar, vanilla to a medium bowl and beat on high until stiff peaks form.
  2. Fold in pureed strawberries until combined.
  3. Add a heaping spoonful, or two, of the whipped cream into individual cups.
  4. Next, add diced strawberries, followed by another spoonful, or two, of whipped cream, then followed by fresh blueberries.
  5. The final layer is whipped cream and then topped with your favorite granola.
  6. Cover with plastic wrap and place in the fridge until ready to serve.

Ingredients
  

For The Homemade Whipped Cream

  • 2 cups heavy cream
