Chicken tostadas are a classic Mexican appetizer perfect for Taco Tuesdays, parties, or any time you get the craving! They’re incredibly quick and easy, and they have a zesty, Tex-Mex flavor that everyone loves. I’ve been making them for decades, so I should know! I love to serve these at almost any kind of get-together with a Mexican theme, and sometimes, I just bring them to backyard parties to inject a little south-of-the-border flavor to any get-together. They’re so easy that I can bring a ton of flavor to any get-together without a ton of work. I know when you try them, you’ll love them as much as I do.

Mini Chicken Tostadas

These mini chicken tostadas start with mini corn tortillas that I fry until crispy. Then, I cook a mixture of chicken, onions, jalapenos, and zesty seasonings and top the tostadas. After that, everyone can add their favorite toppings. That’s all there is to it. It’s ridiculously simple recipe perfect for busy cooks or beginners who want to try their hand at something new.

How to Make Mini Chicken Tostadas

I said before that these mini chicken tostadas are ridiculously easy to make, and I meant it. You’ll be in and out of the kitchen in just a few minutes, a plate of delicious tostadas in hand.

Step 1: Fry the Tortillas

Heat the oil over medium-high heat in a large frying pan or skillet. Then, fry the mini tortilla in small batches of 4 to 5 until crispy. Transfer the fried tortillas to a plate lined with paper towels and repeat until all the tortillas are fried.

Step 2: Make the Chicken Mixture

Melt butter in a large pan. Then, cook the chicken, onions, jalapenos, and seasonings until the chicken is cooked through and the vegetables are tender.

Step 3: Make the Tostadas

Place the chicken mixture on top of each fried mini tortilla and top with cheese and your other favorite toppings. Enjoy!

How to Store and Reheat Leftover Mini Chicken Tostadas

If possible, only make as many tostadas as you think will be eaten and store the remaining chicken mixture in the refrigerator for up to 3 days. If you do have leftover tostadas, they’ll last for about 2 days in the refrigerator.

To reheat the chicken mixture, place it in a sauce pan with a touch of water and cook it on medium-low heat until heated through and the water is gone.

To reheat the tostadas, place them on a baking sheet lined with foil and bake them at 350 until heated through.

Ingredients
  

  • 2 chicken breasts, diced small
  • 1 onion, diced
  • 1 jalapeno, stem and seeds removed, diced
  • 1 tablespoon butter
  • 1 teaspoon Slap Ya Mama
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon red pepper flakes
  • 2 cups pepper jack cheese, shredded
  • 24 mini white corn tortillas
  • 1 cup vegetable oil for frying

Instructions
 

  • In a large frying pan or skillet, heat oil over medium-high heat.
  • Once hot, fry tortillas in small batches (4-5) at a time until crispy.
  • Remove from oil once crispy and place on a paper towel lined plate. Set aside.
  • In a large pan, melt butter.
  • Add in chicken, onion, jalapeno, and seasonings. Stir well to mix together.
  • Cook until chicken is completely cooked through and veggies are tender.
  • Assemble tostadas by placing chicken on top of fried tortilla, top with cheese and any other additional toppings. Repeat with all fried tortillas.
