If you’ve read my blog for any length of time, you know I love two things more than anything else in a recipe – flavor and ease. This delicious recipe gives me both! I’ve been making this recipe for decades because it’s so easy and so delicious. This was a staple recipe when my kids lived at home because I could feed the family quickly and easily, even on a weeknight. Now that my kids are grown and gone with kids of their own, I still make it for me and my guy because it’s so easy and reheats so well.

Cook the sausage slices in oil over medium heat in a large skillet until browned on both sides.

  • 2 pounds smoked sausage, cut into ¼ inch slices
  • 2 teaspoon olive oil
