Blackberry Cobbler Recipe with Brown Sugar Pecan Crust

This delicious blackberry cobbler recipe is made with fresh blackberries and a cobbler topping, then topped with a scrumptious brown sugar pecan crust for the best blackberry cobbler you will ever make.

Blackberry cobbler is one of my favorite desserts to make. When berries are in season and bursting with flavor, there’s nothing better than adding them to a cobbler for a sweet, delicious dessert. I used to help my grandmother and my mother make blackberry cobbler, and now I make my own. I’ve been making this particular recipe for a long time. I started changing things up a bit ago to add a little twist to my cobblers. That’s when I started adding the brown sugar pecan crust that makes this dessert so absolutely fantastic. And bonus: it’s super easy to make, too!

Blackberry Cobbler Recipe

This recipe starts with juicy ripe blackberries mixed with sugar and a few other ingredients. Next, it’s topped with a cobbler batter that has all the classic taste and texture that we love in the recipe. Lastly, I add a little something extra with a brown sugar pecan crust that’s both sweet and crunchy to create a cobbler that’s loaded with a variety of both flavors and textures.

Absolutely. Any berries will work perfectly, and you can dice up most of your other favorite fruits to use in this recipe, as well.

Can I use frozen blackberries to make cobbler?

Yes. Mix the frozen berries with the other filling ingredients just as if they were fresh. You don’t even have to thaw them!

Can you prepare cobbler ahead of time?

You can prepare the filling ahead of time, but I don’t recommend making the batter or the brown sugar pecan topping in advance.

How do you thicken blackberry cobbler?

Adding cornstarch to the filling will thicken up the mixture.

Should you refrigerate cobbler?

Yes, you should always refrigerate your cobbler for maximum freshness and to avoid bacterial growth and a mushy topping.

Storing and Reheating This Blackberry Cobbler Recipe

Store this cobbler in an airtight container in the refrigerator for up to 5 days. To reheat, let it come to room temperature, then place it in the oven on the middle rack at 250 degrees until warmed through.

It only takes a few simple ingredients to make this recipe. Most of which are already in your pantry, and the ones that aren’t are all easily found in your local grocery store.

  • Blackberries
  • Sugar
  • Brown sugar
  • Lemon juice
  • Cornstarch
  • All-purpose flour
  • Baking powder
  • Salt
  • Butter
  • Boiling water
  • Chopped pecans

How to Make This Blackberry Cobbler Recipe

Making this recipe is incredibly easy. It’s all very straightforward, and you’ll be in and out of the kitchen in no time.

Step 1: Prep

Preheat the oven to 375 degrees and spray a 3-quart baking dish with nonstick cooking spray. Set aside. 

Step 2: Make the Filling

Stir the blackberries, sugars, lemon juice, and cornstarch gently together in a large mixing bowl and let them sit for 10 minutes. Pour the berries into the baking dish.

Step 3: Make the Topping

Whisk the flour, sugars, baking powder, and salt together in a medium bowl. Next, cut in the cold butter with a pastry blender or 2 forks until crumbly. Finally, pour in boiling water and stir until combined. Then, spoon the batter over the blackberries.

Step 4: Make the Crust

Combine all the brown sugar pecan crust ingredients in a small bowl, then spoon the mixture evenly over the cobbler.

Step 5: Bake

Bake the cobbler uncovered for 55 minutes. Enjoy with vanilla ice cream or whipped cream!

Ingredients
  

Blackberry Filling

  • 6 cups blackberries
  • ⅓ cup sugar
  • ⅓ cup brown sugar
  • 2 ½ Tbs lemon juice
  • 1 Tbs corn starch

Cobbler Topping

  • 1 ½ cups all purpose flour
  • ⅓ cup brown sugar
  • ⅓ cup sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 stick butter, cut into small pieces
  • ⅓ cup boiling water

Brown Sugar Pecan Crust

  • ¾ cup brown sugar
  • ¼ cup all purpose flour
  • ¾ cup chopped pecans
  • ¼ cup butter, melted

Instructions
 

  • Preheat oven to 375° and spray 3-quart baking dish with non-stick cooking spray. Set aside.

Blackberry Filling

  • Rinse blackberries and place in a large bowl.
  • Sprinkle sugar, brown sugar, lemon juice, and cornstarch over blackberries. Stir gently and let sit for 10 minutes while preparing the flour mixture.
  • Pour blackberries into prepared baking dish.

Cobbler Topping

  • In a medium bowl, whisk flour, brown sugar, sugar, baking powder and salt together until combined.
  • Using a pastry blender, or two forks, mix butter into flour mixture until crumbly.
  • Pour boiling water into flour mixture. Stir until combined.
  • Spoon topping mixture over blackberries and gently spread making sure to cover the blackberries completely.

Brown Sugar Pecan Crust

  • In a small bowl add all the brown sugar pecan crust ingredients. Stir to combine.
  • Spoon brown sugar pecan mixture evenly over cobbler topping.
  • Bake for 55 minutes or until cobbler topping is golden brown and cooked thoroughly.
  • Serve warm with a scoop of vanilla ice cream or whipped topping and enjoy.

    Is it baking powder or baking soda in the ingredients it calls for baking powder and in the instructions it says baking soda
