I love pasta and Italian food!! I’m curious why you rinse your pasta? I always reserve some of the pasta water to add to my dish if it is too dry. I also salt the water heavily before I cook my pasta. My Italian friends always say the water should be salty like the sea. No oil in the water, just salt regular or kosher or sea salt.
