These delicious mini brownie bites are a triple dose of chocolate. The soft and chewy brownie bite, the creamy chocolate frosting, and the chocolate Jimmie candy sprinkles. The perfect bite-size treat the whole family will enjoy.

This delicious brownie recipe takes everything we love about the classic dessert and kicks it into overdrive. Moist, fudgy brownies are baked to perfection, then they’re topped with rich chocolate buttercream frosting and chocolate sprinkles for a triple shot of chocolate flavor that will have everyone coming back for more. These are a bite-size version of the brownie recipe I’ve been making for decades, and it’s just as popular as the original.

Mini Brownie Bites

These bites start with a simple batter that always comes out super moist and fudgy. After letting the brownies cool, I top them with rich, creamy chocolate buttercream frosting. Then, I finish them off with chocolate sprinkles on top. These are a chocolate lover’s dream, and they’re a baker’s dream, as well. They only take about 30 minutes to make!

How to Make Mini Brownie Bites

1: Whisk the dry brownie batter ingredients together.

2: Beat the wet brownie batter ingredients in another bowl.

3: Mix the brownie batter with clean hands until just combined.

4: Roll or scoop out ½-inch balls and flatten them slightly with the back of a spoon. Bake until the tops begin to crack a bit.

5: Cool on a wire cooling rack.

6: Mix the melted butter and cocoa for the frosting. Then, alternate adding the powdered sugar and milk, mixing until you have a rich buttercream frosting.

7: Frost the cooled brownies, top with sprinkles, and enjoy.

Recipe Tips

  • Loosely spoon flour into your measuring cup and level off with a knife to avoid packing and using too much.
  • Mix the batter ingredients until just combined. Overmixing creates tough brownies.
  • Be sure to cool your brownies completely before frosting them. Otherwise, the frosting will melt and slide off of the brownies.

Variations

  • Try mixing chocolate chips into the batter for even more chocolate flavor.
  • You can use Dutch process cocoa for an even deeper chocolate flavor with no bitterness.

What are brownie bites?

Brownie bites are bite-size brownies. They’re made with the same ingredients as full-size brownies. The only thing that changes is the baking time.

How do you store frosted brownies?

Buttercream frosted brownies can be stored at room temperature for up to 3 days and in the refrigerator for up to a week. They can also be frozen for up to 2 months. Brownies frosted with cream cheese frosting should always be refrigerated.

Do brownies harden as they cool?

Sort of. Harden is a poor word choice. Rather than harder, brownies set. They’ll remain moist and fudgy, but while they cool, they’ll also come together more cohesively, holding their shape when cut.

How do you know when mini brownies are done?

In general, mini brownies are done when their tops begin to crack just a bit. At that point, stick a toothpick about halfway into a brownie bit. If it comes out clean or with just a few moist crumbs, the brownies are done.

Can you freeze brownie bites?

Yes, you can. Both brownies and buttercream frosting are freezer-friendly. These brownies will last for up to 2 months in the freezer.

How to Store Leftover Mini Brownie Bite Cookies

Store these bites at room temperature for up to 3 days in an airtight container. You can refrigerate them for up to a week, as well. For longer storage, wrap chilled brownie bites individually in plastic wrap and freeze them for up to 2 months in an airtight, freezer-safe container. Defrost in the fridge overnight or on the counter.

Ingredients
  

Mini Brownie Bites

  • 1 ⅓ cups all purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups granulated sugar
  • 6 tablespoons butter, melted and cooled
  • 4 tablespoons honey
  • 2 teaspoons vanilla extract
  • 2 large egg whites

Chocolate Buttercream Frosting

  • ½ cup butter melted
  • ⅓ cup whole milk
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • ⅔ cup unsweetened cocoa powder
  • Chocolate sprinkles

Instructions
 

  • Preheat the oven to 350°F. Grease two cookie sheets.

Mini Brownie Bites

  • In a large bowl, whisk together flour, cocoa, baking powder, and salt. Set aside.
  • In a medium bowl, mix sugar, butter, honey, vanilla, and egg whites until combined. Add to the flour mixture. With your hands, mix dough just until blended.
  • With your lightly greased hands, roll dough into approximately ½ inch balls, or use a ½ -inch cookie scoop, and place on greased cookie sheets. Flatten each brownie cookie slightly with the back of a spoon.
  • Bake just until brownies are slightly cracked, approximately 5-6 minutes. Cool on the cooling rack.

Chocolate Buttercream Frosting

  • In a medium size mixing bowl, add melted butter. Mix in cocoa.
  • Next add in some powdered sugar and then milk, then some powdered sugar then milk. Repeat until all is well mixed. Mix on low speed.
  • After the frosting is well blended, add in vanilla.
  • Once cookies have cooled completely, frost cookies and sprinkle with jimmie sprinkles.
  • Let the frosting setup then place cookies in a container for storing and place parchment paper in between the layers.

    I’m excited to make these. They look amazing delicious. When you say to measure 1/2 of dough. Are you saying 1 or 2 teaspoons of dough? TIA.
