Cosmic Brownie Cookies

Cosmic Brownie cookies are a delicious mashup of cookies and the classic frosted brownie treat. Super soft and chewy brownie cookies with deep, rich chocolate flavor are topped with semi-sweet chocolate ganache and colorful rainbow sprinkles to create a treat that’s equal parts cookie and brownie and 100% delicious!

Growing up, I remember being so excited when my mom would grab a box of Cosmic Brownies at the grocery store. That super moist brownie topped with chocolate frosting and colorful sprinkles was just about my favorite snack. Even today, I still love them! I also love to experiment with my favorite flavors, which is why I made these Cosmic Brownie cookies. They combine the best of both worlds into one dessert full of deep, rich chocolate flavor and a metric ton of nostalgia.

How to Make This Cosmic Brownie Cookie Recipe

Cookies

1: Whisk the dry ingredients together.

2: Mix the wet ingredients.

3: Combine the wet and dry ingredients with clean hands until just blended.

4: Bake until the cookies are slightly cracked, then set aside to cool on a wire rack.

Ganache

1: Bring the heavy cream to a simmer, then pour it over the chocolate chips in a bowl. Cover with foil.

2: Let the cream and chocolate chips sit for a few minutes, then stir until melted and smooth.

3: Let the ganache sit until just warm and set up.

4: Spoon the ganache over the cookies and smooth it out. Then, sprinkle with candy sprinkles. Enjoy!

Hint

Bring your cream to a simmer but don’t let it boil. Otherwise, it will curdle.

Storage

Store these cookies in an airtight container at room temperature for up to 2 days. You can refrigerate them for up to a week. For longer storage, wrap the cooled cookies in plastic wrap and freeze them for up to 3 months in an airtight, freezer-safe container or heavy-duty freezer bag.

Ingredients
  

Brownie Cookies

  • 1 ⅓ cups all purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups granulated sugar
  • 6 tablespoons butter, melted and cooled
  • 4 tablespoons honey
  • 2 teaspoons vanilla extract
  • 2 large egg whites

Ganache

  • 1½ cups semi sweet chocolate chips
  • ½ cup heavy whipping cream
  • Rainbow chip crunch sprinkles, for topping

Instructions
 

  • Preheat the oven to 350°F. Grease two cookie sheets.

Brownie Cookies

  • In a large bowl, whisk together flour, cocoa, baking powder, and salt. Set aside.
  • In a medium bowl, mix sugar, butter, honey, vanilla, and egg whites until combined. Add to the flour mixture. With your clean hands, mix dough just until blended.
  • With your lightly greased hands, using a 4 tablespoon cookie scoop, roll into balls and place on greased cookie sheets. Flatten each brownie cookie slightly with the back of a spoon or the back of a cup.
  • Bake just until brownies are slightly cracked, approximately 12 minutes. Cool cookies on a wire rack.

Ganache

  • In a heat-safe bowl, add in chocolate chips and set aside.
  • In a small pot, over low heat, heat heavy cream to a simmer but make sure not to let it boil.
  • Pour hot cream into the bowl over chocolate chips and cover the bowl with foil. Let sit for 3-5 minutes without stirring.
  • After 5 minutes, stir cream and chocolate chips together until melted and completely smooth.
  • Let ganache sit for at least 30 minutes.
  • Once cookies have completely cooled and ganache has set up a bit, spoon ganache onto the cookie and smooth it out.
  • Sprinkle with rainbow candy sprinkles and repeat until all cookies are decorated.
