These delicious, soft and chewy homemade brownie cookies with buttercream frosting are rich, fudgy, and baked to chewy perfection, and slathered in a luscious layer of creamy buttercream frosting with jimmie candy sprinkles on top. She was actually throwing a birthday party for her son, and she made a huge batch of these cookies. I don’t want to give an exact number of the cookies I ate, but let’s just say I didn’t have to ask her for the recipe!

  • Unsweetened cocoa powder
  • Baking powder
  • Pinch of salt
  • Granulated sugar
  • Butter
  • Honey
  • Vanilla extract

  • Butter
  • Vanilla extract
  • Powdered sugar
  • Jimmies sprinkles

How to Make Brownie Cookies

Making these cookies is just as easy as gathering all the ingredients from your pantry and fridge. They come together in just a few easy steps, the steps themselves only takes less than 30 minutes from start to finish. More time is needed for the cookies to cool completely, but you can go about your business while waiting for that.

Step 1: Prep

Preheat the oven to 350 degrees and grease 2 cookie sheets.

Step 2: Combine the Dry Ingredients

Whisk the flour, cocoa, baking powder, and salt together in a large bowl and set aside.

Step 3: Combine the Wet Ingredients

Mix the sugar, butter, honey, vanilla, and egg whites until combined in a medium bowl.

Step 4: Make the Dough

Add the wet ingredients to the dry ingredients and mix them with clean hands until just combined.

Step 5: Bake

Using lightly-greased hands, roll the dough into 1-inch balls and place them on the prepared baking sheets. Flatten them slightly with the back of a spoon and bake for 7 to 9 minutes or until just cracked.

Step 6: Cool

Ingredients
  

Brownie Cookies

  • 1 ⅓ cups all purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • Pinch salt
  • 1 ½ cups granulated sugar
  • 6 tablespoons butter melted, cooled
  • 4 tablespoons honey
  • 2 teaspoon vanilla extract

Buttercream Frosting

  • ½ cup butter
  • 3 tablespoons milk
  • 1½ teaspoon vanilla extract
  • 3 cups powdered sugar
  • Jimmies sprinkles

Instructions
 

  • Preheat the oven to 350°F. Grease two cookie sheets.

Brownie Cookies

  • In a large bowl, whisk together flour, cocoa, baking powder, and salt. Set aside.
  • In a medium bowl, mix sugar, butter, honey, vanilla, and egg whites until combined. Add to the flour mixture. With your hands, mix dough just until blended.
  • With your lightly greased hands, roll dough into approximately 1 inch balls and place on greased cookie sheets. Flatten each brownie cookie slightly with the back of a spoon.
  • Bake just until brownies are slightly cracked, approximately 7-9 minutes. Cool on the cooling rack.

Buttercream Frosting

  • In a medium mixing bowl, cream butter, milk and vanilla together. Gradually add powdered sugar and beat until smooth and creamy.
  • Once cookies have cooled completely, frost cookies with a generous amount of frosting, then sprinkle with jimmies sprinkles.
  • Let the frosting setup then place cookies in a container for storing and place parchment paper in between the layers.
