These delicious St Patrick’s Day sugar cookies are soft and chewy and the perfect cookie recipe to celebrate St Patrick’s Day. One of the best parts of any holiday is the sweet treats that come with them. As someone with at least three sweet teeth, I make all kinds of delicious desserts and snacks for all holidays, and when St Patrick’s Day rolls around, I love to make cookies. St Patrick’s Day is a no-frills holiday. Because it’s a holiday about fun, not fanciness, I tend to make cookies to celebrate the occasion. These delicious sugar cookies are usually first on my list for the holiday because they have a fantastic texture, and the mini Green M&Ms and sprinkles add delicious chocolate flavor and festive green color for the holiday.

St Patrick’s Day Cookies

These delicious cookies are so easy to make. They start with a simple sugar cookie base that bakes up soft and chewy thanks to the addition of corn syrup. I fold in mini green M&Ms, mini chocolate chips, and green candy sprinkles for a blast of chocolate flavor and festive green color in every bite, and then I bake the cookies until they’re soft and chewy. It only takes about 30 minutes from start to finish, and these cookies always go fast. It’s the perfect combination.

  • All purpose flour
  • Baking soda
  • Baking powder
  • Salt
  • Butter
  • Granulated sugar
  • Large egg
  • Vanilla extract
  • Corn syrup
  • Mini green M&M’s
  • Mini chocolate chips
  • Green festive candy sprinkles

How to make St Patrick’s Day Sugar Cookies

Making these cookies is a breeze. It’s a basic cookie dough, so all you have to do is mix and bake. Simple.

Step 1: Prep

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

Step 2: Combine the Wet Ingredients

Cream the butter and sugar in a large bowl with an electric mixer for 3 minutes until creamy. Add the egg, vanilla, and corn syrup and mix until well combined.

Step 3: Combine the Dry Ingredients

Whisk the flour, baking soda, baking powder, and salt together in a medium bowl.

Step 4: Make the Dough

Add the dry ingredients to the wet ingredients and mix until combined. Then, stir in the mini M&Ms and candy sprinkles.

Step 5: Place and Decorate

Use a 1 ½-inch cookie scoop to place rounded sugar cookie dough mounds onto the prepared baking sheet. Gently press each cookie down and add a few mini M&Ms and candy sprinkles to the tops of the unbaked cookies.

Step 6: Bake

Bake for 10 to 11 minutes. Then, remove the cookies and let them sit on the baking sheet for another few minutes. Transfer the cookies to a wire rack to cool completely.

  • Be sure your butter is fully softened so it gets light and creamy when combined with the sugar.
  • Stir the mix-ins into the cookies thoroughly so you get a blast of flavor in every bite.

Ingredients
  

  • 2 ⅔ cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup butter
  • 1 ¼ cup granulated sugar
  • 1 large egg
  • 1 ½ teaspoon vanilla extract
  • 1 teaspoon corn syrup
  • ½ cup mini green M&M’s
  • ½ cup mini chocolate chips
  • ¼ cup green festive candy sprinkles, can use more

Instructions
 

  • Preheat the oven to 350° and line a baking sheet with parchment paper.
  • In a large bowl, using an eclectic mixer, cream butter and sugar together until creamy, about 3 minutes.
  • Beat egg, vanilla and corn syrup into mixture until combined
  • In a medium bowl, whisk flour, baking soda, baking powder and salt together.
  • Add dry ingredients into wet ingredients and mix.
  • Stir mini M&M’s and candy sprinkles into cookie dough.
  • Using a 1 ½ inch cookie scoop, place rounded cookie dough on the prepared baking sheet.
  • Gently press each cookie down and add a few mini M&M’s to the tops of each cookie and candy sprinkles, if desired.
  • Bake in a preheated 350 degrees oven for 10-11 minutes.
  • Remove from the oven and let cookies sit on the baking sheet for a couple minutes then transfer to a wire rack to cool completely.

    These look fantastic !!!! My Birthday is March 3rd, but I celebrate it on St, Patrick’s Day because its a good excuse to have a Great little Party !!! I love making Corned Beef and Cabbage with Carrots and Onions every St, Patrick’s Day, and I think these lovely M&M Sugar Cookies would make a nice dessert presentation, Next to some Chocolate Guinness Cupcakes lol !!! I will have to substitute most of the sugar with Monk Fruit Sweetener, due to having the dreaded type 2 Diabetes !!! ): I believe they will still taste great because the M&Ms will be sweet enough along with the Monk fruit Sweetener !!!
