These apple pie cookies are a delicious, quick, easy, and convenient way to enjoy the flavors of classic apple pie in cookie form. They’re soft and chewy and filled with a homemade apple pie filling and baked until golden brown.

This time of year, I’m all about apples, and any time of year I love cookies. That’s why I love this particular recipe for apple pie cookies so much. It combines two of my favorite things into one delicious treat. These tiny apple pie flavored cookies are full of classic fall flavor, all the sensibilities of cookies, and heck, they even look like little apple pies. I love to make these to keep on hand for snacking or to bring to parties and potlucks, especially when the holidays roll around. I love how easy they are to make, and everyone always loves the way they taste, and I rarely have leftovers when I bring these cookies anywhere!

Apple Pie Cookies

These delicious cookies start with a simple apple pie mixture. I layer it out on an unrolled refrigerated pie crust, then I top it with strips of more pie crust to create a lattice. Finally, I brush it with egg wash, sprinkle it with coarse sugar, and bake the cookies until they’re golden brown. The entire process only takes about 30 minutes, and when I’m all done, I have delicious little pie crust cookies that taste just like apple pie!

Apple Pie Cookies Ingredients

You’ll only need a few simple baking ingredients to make these cookies. You’ll probably have most of them in your kitchen right now, but you’ll find anything else you might need at your local grocery store.

  • Granny Smith apples, peeled, and diced into small pieces
  • Water
  • Granulated sugar
  • Cornstarch
  • Lemon juice
  • Ground cinnamon
  • Pillsbury™ refrigerated pie crust
  • Coarse sugar, optional
  • Large egg

How to Make Apple Pie Cookies

Making these cookies is a breeze. It only takes a few minutes to make the apple filling, and after that, you just do a little layering and baking. It’s as easy as, well, pie.

Step 1: Prep

Preheat the oven to 375 degrees and line a baking sheet with parchment paper. Set aside.

Step 2: Make the Apple Mixture

Bring water, cornstarch, sugar, cinnamon, and lemon juice to a boil, stirring constantly, in a medium saucepan on low heat. Cook for 3 to4 minutes until the sauce thickens up. Then, add the apples and simmer for 8 to 10 minutes. Set aside and let the mixture cool.

Step 3: Top the Pie Crust

Roll the pie crust out smoothly on a floured surface. Then, spread the cooled apple mixture evenly over it.

Step 4: Add the Lattice

Roll out the second pie crust and cut it into strips. Then, layer them over the filling in a lattice pattern.

Step 5: Bake

Whisk the egg and water together. Then, brush the egg wash over the cookies, sprinkle with coarse sugar, and bake for 15 minutes or until golden brown. Enjoy!

Ingredients
  

  • 2 Granny Smith apples, peeled, and diced into small pieces
  • ¾ cup water
  • ⅓ cup granulated sugar
  • 2 tablespoon cornstarch
  • 1 ½ teaspoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 box Pillsbury™ refrigerated pie crust
  • 1 large egg
  • 1 tablespoon water
  • 2 tablespoons coarse sugar, optional

Instructions
 

  • In a medium saucepan over low heat, bring water, cornstarch, sugar, cinnamon, and lemon juice to a boil, stirring constantly.
  • Continue stirring for 3-4 minutes until the sauce thickens up.
  • Add apple pieces to the saucepan, stir and let simmer for 8-10 minutes.
  • Remove from heat and let cool
  • Preheat the oven to 375° and line a baking sheet with parchment paper. Set aside.
  • On a lightly floured surface, roll pie crust out smoothly.
  • Spread cooled apple mixture over pie crust in an even layer.
  • Roll the second pie crust out on a lightly floured surface and slice pie crust into thin strips.
  • Place the strips in a lattice pattern over the top of the apple filling.
  • Using a round cookie cutter or biscuit cutter, cut out “cookies” and place on the prepared baking sheet.
  • In a small bowl, whisk egg and water together. Brush egg wash over the top of the cookies and sprinkle with coarse sugar.
  • Bake for 15 minutes, or until cookies are golden brown.
