Fried Rib Eye Breakfast Burritos

These Fried Rib Eye Breakfast Burritos are definitely a delicious morning treat especially when there’s leftover rib eye from Christmas.

These rib eye steak and egg breakfast burritos are homemade and better than store bought. Seriously delicious, these are so filling and a great way to use up any leftover rib eye roast or rib eye steak.

Fried Rib Eye Breakfast Burritos are deliciously fried, filled with eggs, rib eye, cheese and more.

I always buy a fairly large roast for Christmas knowing that I’ll have leftovers for recipes like this. I have made many different recipes using our leftover rib eye. These Cheesy Rib Eye Enchiladas are definitely scrumptious and these Rib Eye Street Tacos are super delish as well. Fried Rib Eye Breakfast Burritos are fried to perfection, filled with scramble eggs, rib eye, cheese, onions and more.

Ingredients Needed For Rib Eye Breakfast Burritos

  • Leftover Rib Eye
  • Onions
  • Eggs, butter
  • Diced green chilies
  • Rotel
  • Seasoning, garlic salt, pepper
  • Red pepper flakes
  • Cheddar cheese
  • Flour tortillas
  • Vegetable oil

Fried Rib Eye Breakfast Burritos are stuffed full of beef, eggs, cheese and then fried.

How To Make Fried Rib Eye Breakfast Burritos

  1. In a large skillet or cast iron skillet over medium heat, melt butter then add rib eye, eggs, onions, diced green chilies, Rotel, seasoning and season with salt and pepper. Stir.
  2. Scramble eggs over medium high heat until eggs are almost done. Turn flame off.
  3. Heat up tortillas on stove over medium low heat for a about 10 seconds on each side. Place warm tortillas in a kitchen towel to keep warm.
  4. Place tortilla on a plate, add egg mixture to the center and top with cheese.
  5. Fold tortilla by taking the bottom and pull over the mixture. Tuck in the sides and then roll into a burrito.
  6. Heat oil in another frying pan over medium high flame and once oil shimmers, place a few burritos at a time in the oil.
  7. Fry until golden brown, then turn over and fry until done.
  8. Remove from pan and place on a plate lined with paper towels.
  9. Optional: serve with pico de gallo, salsa, sour cream, diced onions.

Ingredients
  

  • 2 cups leftover rib eye, cut into ½" chunks
  • ½ cup chopped onions
  • 1 Tbsp butter
  • 10 eggs, whisked
  • 3 tsp diced green chilies
  • 3 Tbsp Rotel®
  • 1 tsp Slap ya mama seasoning
  • 1 tsp garlic salt
  • ½ tsp pepper
  • ¼ tsp red crushed peppers
  • 2 cups shredded cheese, any kind
  • 8-10 flour tortillas, burrito size
  • 1 cup vegetable oil (might need more)

Instructions
