This creamy and delicious sausage tortellini soup is made with hot Italian sausage and cheese tortellini all in a creamy and delicious sauce, and is a quick and easy, easy weeknight dinner recipe. This soup is bursting with flavor and it’s a delicious recipe the whole family will enjoy.

I don’t know about you, but I love making soup when the weather starts to cool off outside. When the leaves start to change and there’s a chill in the air, I know it’s time to start making all kinds of delicious soups! From creamy soups like pumpkin and sweet potato to chicken and dumplings and everything in between, soup was tailor-made for fall, if you ask me. One of my favorite soups to make during this time of year is this delicious sausage tortellini soup. Not only is it steaming hot, it also adds a kick of spicy Italian sausage to make it even warmer. It’s one of my favorites, and I think it will quickly become one of yours, as well.

Creamy Sausage Tortellini Soup

This creamy sausage tortellini soup is a delicious dish that really satisfies. Hot, spicy Italian sausage and tortellini noodles are swimming in a rich, creamy chicken sauce filled with onions, garlic, basil, parmesan cheese, and other spices. It’s a hot dish in more ways than one that fills you up while it warms you up for the evening. It’s the perfect comfort food. It makes a great lunch or dinner, and it’s perfect for cooking up in big batches to feed the family today, tomorrow, and even the next day, too!

  • All purpose flour
  • Basil

How to Make Sausage Tortellini Soup

Making this one-pot tortellini soup recipe is just as easy as the ingredients that it uses. In just a few simple steps, you’ll have a delicious soup that everyone loves. It’s so easy to make, and it’s perfect for a weeknight meal, but it’s so delicious, taste scrumptious and it’s perfect for any occasion, even special get-togethers.

Step 1: Prep Your Ingredients

Dice the onion and garlic and measure out all of your ingredients.

Step 2: Cook the Sausage

In a large soup pot or Dutch oven, cook the sausage and onion over medium-high heat until the sausage is fully cooked and the onions are tender. Add garlic to the pan and cook for an additional two minutes. Drain grease and return to pan. Finally, sprinkle the flour over the sausage and onions, stirring to thoroughly coat them. Add the basil, oregano, paprika, pepper, salt and red pepper flakes. Stir to combine.

Step 3: Add the Liquid

Pour in the heavy cream and chicken broth. Stir well and continue to cook over medium-high heat until the soup comes to a boil.

Step 4: Add the Tortellini

After the soup comes to a boil, reduce the heat and add the tortellini. Stir and let the soup simmer for ten minutes or until the tortellini is fully cooked. Spoon into individual serving bowls, and top with Parmesan cheese. Serve hot!

Can I Freeze Tortellini Soup?

You can freeze tortellini soup, but – and this is a big but – you have to store it WITHOUT the tortellini added. Make the soup per the directions, and then stop when it’s time to add the tortellini. Thoroughly cool the soup, place it in a freezer container, or into a freezer bag, and then freeze it. When you’re ready to finish, take the soup out of the freezer and place in the refrigerator overnight to defrost, then place the soup in a pot and heat it back up, then add the tortellini and continue.

How Long Will Tortellini Soup Last?

This soup will last for about three to four days in the refrigerator WITHOUT the pasta in it. If you leave the pasta in the soup, you’ll end up with mushy pasta that absorbed all the liquid and no soup. If you plan to store this soup, remove the pasta and refrigerate it separately.

What is Tortellini Soup Made of?

Tortellini soup is an Italian soup that consists of a broth, either creamy or thin, sausage or ground beef, vegetables, and of course, tortellini noodles.

How Can I Store Leftover Soup with Pasta?

You can’t. You need to remove the pasta, or you’ll end up with a mushy, inedible mess.

What Can I Serve with Sausage Tortellini Soup?

This is a hearty soup that’s a complete meal all its own, so I recommend serving it with a nice side salad and maybe some crusty bread.

How to Store and Reheat Leftovers

As mentioned earlier, this soup will keep for about four days in the refrigerator without the pasta. Remove the pasta from the soup. Then, place the soup and the pasta in individual airtight containers.

To reheat the pasta, simply place it in a pot along with the tortellini and heat over medium low heat until heated through.

Ingredients
  

  • 1 pound hot Italian sausage
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 tablespoon flour
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • ½ teaspoon pepper
  • 1 teaspoon salt
  • ¼ teaspoon red pepper flakes
  • 2 cups heavy cream
  • 32 ounces chicken broth
  • 20 ounces tortellini, frozen or fresh
  • ¼ cup Parmesan cheese, optional

Instructions
 

  • In a large soup pot or Dutch oven, cook sausage and onions over medium high heat until sausage is fully cooked through and onions are tender.
  • Add garlic to pan and cook for 2 additional minutes. Drain grease and return to pan.
  • Sprinkle flour over sausage and onions. Stir to coat thoroughly.
  • Add basil, oregano, paprika, pepper, salt and red pepper flakes. Stir to combine.
  • Pour heavy cream and chicken broth into sausage mixture. Stir well. Continue cooking until soup starts to boil.
  • Reduce heat and add tortellini to pan. Stir and let simmer for 10 minutes or until tortellini is fully cooked.
  • Top with parmesan cheese and serve hot. Enjoy!

    Why can you not freeze this with the tort. in it ? I freeze my chicken tort. soup and all is good when reheated.

      Hi Toni, no, you can use sweet Italian or mild Italian. Both work well in this recipe. :)
