I love cooking with butternut squash. Every fall when it comes into season, I make a ton of recipes with it. Roasting butternut squash is one of my favorite ways to prepare it because I can do so many things with it. I can mash it up like mashed potatoes, make butternut squash bread, use it in sweet casseroles like sweet potatoes, put it in soups, and so much more. And the best part is that it’s so easy to make! I’ve been roasting butternut squash for years, and I wanted to share this super easy method with all of you today.

Do you know how long it’s been that I’ve been searching for my Grandma’s poor man’s cake recipe? Forever! A while back I was looking through all my baking supplies and low and behold, inside an old recipe pamphlet, out falls this recipe. Needless to say, I was SO HAPPY. I remember as a kid going to my Grandma Anne’s house and every time she always had some sort of baked goodies for us kids. Whether it was her “rollie pollies” made from her left over pie crust dough, or this delicious poor man’s cake, she was simply the best at baking delicious treats.

I’ve tried many times over the years trying to make this poor man’s cake like my grandmother used to make. It just never seemed to work. Until now.

This cake recipe is a vintage recipe that some of you might remember. Maybe your grandmother used to make this poor man’s cake like mine did. With this cake, no eggs are needed and basically most of the ingredients are already in your pantry. An easy cake recipe that I think you will enjoy, especially if you love raisins.

Crock Pot Spicy Beans with Rice

These crock pot spicy beans and rice are an easy weeknight meal that tastes yummy. Not only do they taste great but this is an easy crock pot recipe to throw together that the whole family will enjoy, plus it’s healthy.

If spicy is not your thing, just eliminate the jalapeños and the Cajun spice then you can still enjoy this delicious recipe. In addition, these beans can be used in burritos, tacos, or as a side dish to your favorite Mexican meal as well.

How To Make Crock Pot Beans and Rice

1. Sort beans and remove any debris. Place beans in a large pot and cover with water 2 inches above the beans. Let soak overnight. Drain water.

2. Lightly spray a 6 quart crock pot with a non stick spray.

3. Add beans, onions, garlic, jalapeños, seasonings and broth to crock pot. Stir.

4. Cover and let cook for 6-8 hours on high.

5. Cook rice according to package directions.

6. Serve beans over a bed of rice and top with sour cream, cilantro, green onions, optional.

And now that spring has arrived, summer is right around the corner and all the delicious summer fruits will be available to make delicious recipes like this raspberry sauce. And, this raspberry sauce is so easy to make. No big fuss, and in no time you can enjoy this delicious raspberry topping.

How To Make Raspberry Topping

Start out by heating a medium saucepan over low-medium heat. Add 2 cups of raspberries, sugar, lemon juice, 3 tablespoons water to pan and bring to a boil. Let the raspberries boil for 3-4 minutes, then add the remaining cup of raspberries. Stir. Mix water and corn starch together and then add to the pan with the raspberries, stir. Continue cooking until sauce thickens. Remove from heat and either serve warm over pancakes, waffles, french toast or chilled and used for toppings on cheesecakes, crepes, etc.

This jicama avocado salad is a perfect summer salad recipe. With the crunchiness of the jicama, the creaminess of the avocados and the flavorful red onions, cilantro and tomatoes, all mixed with a delicious hatch green chile sauce, makes a delicious zesty salad that is not only tasty, but healthy.

Jicama is great and used in so many different recipes or just sliced up and added to a veggie tray along with broccoli, carrots, cauliflower and many other favorite vegetables with a tasty ranch dip. Now that’s what I’m talking about. Healthy and delicious, this jicama avocado salad is not only healthy, it’s Vegan as well.

There is a bite to it but it’s not too spicy at all. The hatch sauce is a bit on the spicy side. If you are not able to buy hatch green chile sauce in your local grocery store, salsa verde green chile sauce works well too. There’s just something about the deliciousness in the hatch sauce.

Easy Blackberry Topping Recipe

Blackberries are another favorite of mine right along side delicious blueberries. This easy blackberry topping is perfect to add on top of a huge stack of pancakes, stuffed inside of french toast, and use in crepes, as well as a topping for a delicious cheesecake.

Like my easy blueberry topping, this is super simple to make and would be a great addition to the morning breakfast menu. My friend Esther made my easy blueberry topping for her pancakes and absolutely loved it. I know she’s going to love this one too! Have you all made it yet?

This blackberry topping is exactly the same as my blueberry topping other than the fruit has been changed. I also have an easy raspberry topping that I’ll post soon. If you want to get a jump on that one, just substitute raspberries for the blackberries. Oh man, it’s delicious too!

I actually made this delicious easy blackberry topping to use in my blackberry hand pies that I’ll also post soon. Talk about delish…. they’re super yummy. And, I made raspberry hand pies and blueberry hand pies too.

Vegan Cheese Sauce is a delicious and healthy alternative to the traditional dairy-based cheese sauce. It’s made with a variety of plant-based ingredients, such as raw cashews, potatoes, carrots, seasonings, nutritional yeast and a few more ingredients. A delicious cheese sauce that can be used in a variety of dishes.

As you’ve probably guessed from reading my blog, I focus on flavor first when it comes to cooking. Oh, that doesn’t mean that I’m not health-conscious, I was a nurse for decades, after all. Peach Crisp is a delicious summertime dessert recipe loaded with fresh, juicy peaches, topped with a crispy, crunchy topping, baked to perfection, then to make this peach crisp even better, topped with a scoop of vanilla ice cream.

One of my favorite desserts to make is a classic peach crisp. Using canned peaches, I can make it any time of year, but I particularly love making it in the summer when fresh peaches are readily available. There’s something you just can’t beat about fresh peaches cooked to sweet perfection and topped with a crumbly topping. When peaches come into season, there’s nothing better, and there’s nothing I love more than this delicious crisp. I grew up with recipes like this that my mom and grandmom made, and when I became a mom, I made crisps for the kids all the time. Lately, this simple recipe has been my favorite variation so far, and I think you’ll agree when you give it a try.
