Have been making breakfast sandwiches with either English Muffins or Bagels for several years now. In addition to suggestions mentioned here, this last Summer I used fresh Kale, or Swiss Chard pulled from my garden. Also used hot peppers ranging from Jalapeno, Habanero, Cayenne, Tabasco, & Ghost along with fresh Green Onions mostly pulled from the garden. Cheeses varied from Sharp Cheddar through several of the traditional Italian cheeses to the Monterrey Jack. All of the fresh ingredients were pulled from the Garden or small handful purchased at our local Farmers Market. My suggestion is to mix it up, and don’t be afraid to try a variety of combos.
