Imagine sweet, juicy blueberries and plump blackberries bursting with flavor, nestled beneath a classic cobbler topping. But wait, there’s more! A layer of crunchy brown sugar pecan topping is sprinkled over the top and baked to golden perfection. This berry cobbler offers a symphony of textures, and the combination of flavors is simply irresistible.

If you love cobblers, then you’ve come to the right place! I’ve been making cobblers of all kinds since I was old enough to help my mom in the kitchen. I love all that fruity filling with the rich cobbler topping. Over the years, I’ve made everything from classic peach cobbler to berry cobblers, and everything in between. Although I love the classics, my favorite thing to do is make new creations with old-school recipes. That’s what I’ve done with my berry cobbler with brown sugar pecan topping. Like so many other cobbler recipes I’ve shared, this one takes a classic cobbler recipe and adds a little something something with the addition of a brown sugar pecan topping. It creates a rich, berry cobbler with classic flavor and some added sweetness and crunch.

Berry Cobbler with Brown Sugar Pecan Topping

This delicious cobbler starts with a sweet, mixed berry filling of blackberries and blueberries. I top it with classic cobbler topping, then I add a brown sugar pecan topping for added sweetness and crunch. After that, I simply bake it until it’s golden brown. That’s all there is to it! The entire process only takes a little over an hour from start to finish, and when I’m all done, I have a sweet treat for a few days. It reheats amazingly! I love to serve it as a dessert when my kids come over or bring it to potlucks and parties. It’s perfect for any occasion.

  • Fresh  blackberries
  • Fresh blueberries
  • Granulated sugar
  • Light brown sugar
  • Lemon juice
  • Lemon zest
  • Cornstarch
  • Ground cinnamon
  • All purpose flour
  • Baking powder
  • Salt
  • Butter
  • Chopped pecans

How to Make Berry Cobbler

Making this cobbler is no more difficult than making a classic cobbler recipe. The only difference is the addition of the brown sugar pecan topping, which only takes a few minutes. It’s an easy recipe that even beginners can make.

Step 1: Prep

Preheat the oven to 375 degrees and spray a 3-quart baking dish with non-stick spray. Set aside.

Step 2: Make the Berry Filling

Rinse the berries and place them in a large bowl. Then, add the sugar, brown sugar, lemon juice, lemon zest, cornstarch, and cinnamon and stir gently. Let the berry mixture sit for 10 minutes. Pour the berries into the baking dish.

Step 3: Make the Cobbler Topping

Whisk the flour, brown sugar, sugar, baking powder, and salt together in a medium bowl. Then, use a pastry blender or two forks to mix the butter into the flour until crumbly. Then, pour boiling water into the mixture and stir until combined. Spoon the mixture over the berries and spread to cover them completely.

Step 4: Make the Brown Sugar Pecan Topping

Combine the topping ingredients and spoon the mixture evenly over the cobbler topping.

Step 5: Bake

Bake the cobbler for 55 to 65 minutes until golden and the berries are bubbly. Serve warm and enjoy!

Recipe Tips

  • Give the berries a full 10 minutes to sit so they begin to macerate and create a sweet juice.
  • Cube your butter and keep it in the refrigerator until ready to cut into the flour mixture. Cold butter is key!
  • Thoroughly coat the interior of your baking dish so nothing sticks. Use even strokes to coat the dish with no pooling.

  • Use any berries for this recipe, such as adding raspberries or strawberries.
  • Cook apples, pears, peaches, pineapple, or your other favorite fruits down on the stovetop to make a fruit filling.

Your filling could be runny because you forgot to add cornstarch. If you use frozen berries without defrosting and draining them, your filling could become runny.

How to Store and Reheat Berry Cobbler Leftovers

Refrigerate your cobbler for up to 5 days in its original dish wrapped in plastic wrap or foil, or place it in an airtight container. For longer storage, freeze it for up to 3 months in an airtight, freezer-safe container.

Ingredients
  

Berry Filling

  • 4 cups blackberries
  • 4 cups blueberries
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 2 ½ tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon cornstarch
  • ½ teaspoon cinnamon

Cobbler Topping

  • 1 ½ cups all purpose flour
  • ⅓ cup brown sugar
  • ⅓ cup granulated sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 stick butter, cut into small pieces
  • ⅓ cup boiling water

Brown Sugar Pecan Topping

  • ¾ cup light brown sugar
  • ¼ cup all purpose flour
  • ¾ cup chopped pecans
  • ¼ cup butter, melted

Instructions
 

  • Preheat the oven to 375° and spray 3 quart baking dish with non-stick cooking spray. Set aside.

Berry Filling

  • Rinse blueberries and blackberries, and place in a large bowl.
  • Sprinkle sugar, brown sugar, lemon juice, lemon zest, cornstarch and cinnamon over berries. Stir gently and let sit for 10 minutes while preparing the flour mixture.
  • Pour berries into the prepared baking dish.

Cobbler Topping

  • In a medium bowl, whisk flour, brown sugar, sugar, baking powder and salt together until combined.
  • Using a pastry blender, or two forks, mix butter into flour mixture until crumbly.
  • Pour boiling water into the flour mixture. Stir until combined.
  • Spoon topping mixture over berries and gently spread making sure to cover the berries completely.

Brown Sugar Pecan Topping

  • In a small bowl add all the brown sugar pecan crust ingredients. Stir to combine.
  • Spoon brown sugar pecan mixture evenly over cobbler topping.
  • Bake for 55-65 minutes, or until the cobbler topping is thoroughly cooked.
  • Serve warm with a scoop of vanilla ice cream or whipped topping and enjoy.
