These chicken salad croissant sandwiches are light, crunchy, and made with tender cooked chicken paired with sliced grapes, water chestnuts, red onion, mayo, and more and are absolutely so flavorful and delicious. If you’re a fan of chicken salad sandwiches, then I have something for you today that you’re really going to love. It’s a new favorite of mine and my family – chicken salad on croissants! I love this simple, delicious recipe because it’s so simple to make, and it’s packed full of flavor. It’s the perfect, appetizer, lunch, or dinner. Although I make this with freshly-boiled chicken, it would be an excellent recipe to use up leftover chicken, as well. Either will work. With all that delicious flavor in both the chicken salad and the croissants and how incredibly easy the recipe is, it’s a winner on all fronts.

These delicious chicken salad sandwiches start with tender chicken breasts. Then, I combine them with grapes, red and green onions, and water chestnuts, and I mix it all up with mayo for a creamy, flavorful chicken salad that’s already perfect all on its own. I don’t stop there, though. I cut buttery, flaky croissants in half, and then I load them up with the chicken salad. The result? A delicious sandwich that combines delicious, buttery bread and super-flavorful chicken salad in each and every bite.

In a large mixing bowl, combine the shredded chicken and mayo and stir until combined.

Ingredients
  

  • 2 boneless skinless chicken breasts, boiled and shredded
  • 1 cup mayonnaise
  • 1 cup green grapes, cut in half
  • 1 medium red onion, diced
  • 2 green onions, sliced
  • 5 ounce can water chestnuts, chopped
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • 8 croissants, sliced in half lengthwise

Instructions
 

  • Add chicken to a pot of water and boil over medium heat until chicken is cooked thoroughly. Remove from pot and shred.
  • In a large bowl, add shredded chicken and mayonnaise. Stir until combined.
  • Next, add grapes, red onions, green onions, water chestnuts, apple cider vinegar, salt and pepper. Stir to combine and place in the refrigerator to chill.
  • When ready to serve, stir chicken mixture and place desired amount of chicken salad on croissants. Top with lettuce, if desired, and enjoy.
