This sausage pancake on a stick recipe is super easy to make and is always a breakfast favorite, made with sausage links that are cooked and then dipped into a fluffy pancake batter and fried to golden perfection.

  • Heat a frying pan over medium heat and cook sausage links according to package directions.
  • Remove from the pan and place on a paper plate lined with paper towels to absorb any excess grease.
  • In a medium bowl, whisk flour, sugar, baking soda, salt, and baking powder together.
  • In a small bowl, whisk eggs and buttermilk until combined.
  • Pour wet ingredients into dry ingredients and gently stir. Batter will be lumpy.
  • Using a large saucepan, heat oil over medium high heat.
  • Place an apple skewer in one end of all the sausages and dip each sausage into the pancake batter and place into the hot oil holding it safely over the hot oil.
  • Deep fry until golden brown on all sides.
  • Remove from oil, place on a plate lined with paper towels and repeat until all sausage pancakes on a stick are cooked.
  • Serve hot with powdered sugar and maple syrup.
