Texas Twinkies

These Texas Twinkies are a delicious appetizer recipe made with fresh jalapeños stuffed with a cream cheese mixture and leftover brisket, wrapped in bacon, brushed with barbecue sauce, and oven-baked.

  • Preheat the oven to 375 degrees and line a baking sheet with aluminum foil and place a wire rack on top of the foil. Set aside.
  • Rinse and dry jalapenos. Cut down the center of the jalapenos but do not go all the way through. If needed, remove about ¼ inch all the way down so it’s easier to remove seeds and stuff with the brisket/cheese filling.
  • In a medium bowl, beat cream cheese until fluffy.
  • Add seasonings, shredded cheese and chopped brisket. Stir to combine.
  • Spoon the brisket cream cheese mixture into each jalapeno.
  • Wrap all the jalapenos with bacon and place on the prepared baking sheet. Use toothpicks to secure the bacon if needed.
  • Bake for 50-60 minutes or until bacon is crispy.
  • Remove from the oven, brush with BBQ sauce, and return to the oven for 10-15 additional minutes.
