These Texas Twinkies are a delicious appetizer recipe made with fresh jalapeños stuffed with a cream cheese mixture and leftover brisket, wrapped in bacon, brushed with barbecue sauce, and oven-baked.
Preheat the oven to 375 degrees and line a baking sheet with aluminum foil and place a wire rack on top of the foil. Set aside.
Rinse and dry jalapenos. Cut down the center of the jalapenos but do not go all the way through. If needed, remove about ¼ inch all the way down so it’s easier to remove seeds and stuff with the brisket/cheese filling.
In a medium bowl, beat cream cheese until fluffy.
Add seasonings, shredded cheese and chopped brisket. Stir to combine.
Spoon the brisket cream cheese mixture into each jalapeno.
Wrap all the jalapenos with bacon and place on the prepared baking sheet. Use toothpicks to secure the bacon if needed.
Bake for 50-60 minutes or until bacon is crispy.
Remove from the oven, brush with BBQ sauce, and return to the oven for 10-15 additional minutes.
