This Taco Bell Mexican Pizza recipe is a delicious copycat version of the popular Mexican pizza from Taco Bell and is made from scratch which tastes better and is cheaper to make at home.

I live in Texas, so I’ve come to love authentic Mexican and Tex-Mex food. But for decades I lived in California, and while we have amazing Mexican food there, as well, I always loved Taco Bell. One of my favorites from Taco Bell is their Mexican pizza. So I decided to take one of my favorite fast food treats and recreate it with authentic Mexican flavors. The results is a copycat recipe that is miles better than the original!

Taco Bell Mexican Pizza Recipe

This delicious copycat recipe starts with seasoned beef and diced onions cooked until tender. Then, I add taco seasonings to create classic taco meat. After that, I fry corn tortillas until crispy and top them with refried beans, taco meat, cheese, and another tortilla. Then, it’s finished with taco sauce, shredded cheese, and diced tomatoes. When it’s all done, I have a delicious copycat with everything we love about Taco Bell Mexican pizzas and authentic Mexican food.

Taco Bell Mexican Pizza Ingredients

This recipe uses simple ingredients that can be found at any grocery store. It only takes a quick trip to get everything you need.

  • Ground beef
  • Onion
  • Cloves garlic
  • Taco seasoning
  • Water
  • Refried beans
  • Sharp cheddar cheese
  • Red enchilada sauce
  • Taco Bell mild hot sauce
  • Roma tomato
  • Corn tortillas
  • Vegetable oil

How to Make Taco Bell Mexican Pizza Recipe

Making this recipe is just as easy as heading to the store to pick up the ingredients. It only takes a few minutes and a few simple steps, and you’ll be all done!

Step 1: Cook the Ground Beef

Cook the ground beef and onions in a large frying pan or skillet over medium-high heat until the meat is no longer pink. Then, add garlic and cook for another two minutes. Drain and return to the pan.

Step 2: Add Taco Seasoning

Add the taco seasoning and water to the beef and cook until most of the liquid is absorbed.

Step 3: Heat the Refried Beans

Add the refried beans to a medium pan and heat until hot.

Step 4: Fry the Tortillas

Heat oil over medium-high heat until hot in a shallow pan. Then, fry the corn tortillas until golden and hard on both sides. Transfer to a baking sheet lined with paper towels to absorb the excess oil.

Step 5: Make the Sauce

Mix half of the hot sauce and half of the enchilada sauce together in a small bowl.

Step 6: Make the Pizzas

Spread the refried beans on top of a fried corn tortilla. Then, add the taco meat and sprinkle with cheese. Place another tortilla on top. Top the tortilla with sauce and sprinkle with more shredded cheese and diced tomatoes. Cut into four pieces and enjoy!

Recipe Tips

  • Only cook your meat until it’s no longer pink. Overcooked ground beef is rubbery and flavorless.
  • Remove the tortillas as soon as they’re hard. You want them crispy, not burned.
  • Always use oil with a high smoke point for frying.

Variations

  • You can use ground turkey or pork or chorizo in place of ground beef.
  • For an extra kick of heat and flavor, add diced jalapenos to the taco meat.
  • You can use enchilada sauce without hot sauce for a mild version.
  • Try adding sliced black olives to the top of your pizza.
  • Use a Mexican cheese blend or your favorite cheese.

What to Serve with Taco Bell Mexican Pizza

Top your Mexican pizza with cheese, sour cream, diced tomatoes, and/or spicy enchilada sauce. This pizza can be paired with any of your other favorite Mexican dishes for a larger taco party spread, too.

How to Store and Reheat Leftover Mexican Pizza

If possible, don’t store constructed Mexican pizzas, the tortillas can become soggy. Instead, store the taco meat in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months in an airtight, freezer-safe container. Then, fry the tortillas and construct the tacos when ready to serve.

To reheat the meat, place it in a skillet and heat over medium-low heat until heated through.

Ingredients
  

  • 2 pounds ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • ½ cup taco seasoning
  • 1 ½ cup water
  • (2) 15 ounce refried beans
  • 3-4 cups sharp cheddar cheese shredded
  • 10 ounce red enchilada sauce (I used half a can)
  • 7.5 ounce Taco Bell mild hot sauce, (I used about half bottle0
  • 1 roma tomato diced small
  • 14-16 corn tortillas
  • 1 cup vegetable oil for frying

Instructions
 

  • In a large frying pan or skillet over medium high heat, cook ground beef and onions until meat is no longer pink. Add garlic and cook for another two minutes. Drain and return to the pan.
  • Add taco seasoning and water. Continue cooking until most of the liquid is absorbed.
  • Heat refried beans in a medium pan until hot.
  • In a shallow pan, heat oil over medium high heat.
  • Fry corn tortillas until golden and hard on both sides then place on a baking sheet lined with paper towels to absorb the excess oil.
  • In a small bowl, mix half the enchilada sauce and half the hot sauce together.

Making the Pizza

  • Spread refried beans on a fried tortilla followed by taco meat. Sprinkle with cheese and place the second tortilla on top.
  • Spoon sauce over the top and sprinkle with additional shredded cheese, and add diced tomatoes.
  • Cut into 4 pieces and enjoy.
