These Reuben sliders transform the iconic Reuben into bite-size sandwiches with savory corned beef, melty Swiss cheese, tangy sauerkraut, and thousand island dressing, stuffed between soft Hawaiian rolls, then topped with a garlicky herb butter, and baked to perfection. Reuben Sliders

These delicious sliders are loaded with thinly-sliced corned beef, Swiss cheese sauerkraut, and thousand island dressing. I layer them on soft, sweet Hawaiian rolls and brush them with a delicious garlic herb butter. Finally, I bake them until the rolls are golden and the filling is melty and gooey. The entire recipe only takes about 35 minutes from start to finish, and when I’m all done, I have a plateful of ooey gooey sliders that always has everyone coming back for more again and again. It’s a great dish for parties or dinner. You can even serve them as an afternoon snack!

How to Make Reuben Sliders

Making these sliders is so easy! It only takes a few minutes of prep and about 20 minutes in the oven. After that, you just serve them up and watch them disappear. There’s really nothing to it.

Step 1: Prep

Preheat the oven to 350 degrees and lightly spray a baking sheet with non-stick cooking spray.

Step 2: Cut the Rolls

Slice the Hawaiian rolls in half and place the bottom buns on the prepared baking sheet.

Step 3: Top the Rolls

Spread a layer of thousand island dressing over the bottom buns. Then, place 6 slices of Swiss cheese over the dressing. Roll up the corned beef and place it over the cheese, using all the corned beef. Spoon the sauerkraut over the corned beef, drizzle more dressing over the sauerkraut, and add the remaining Swiss cheese. Finally, add more dressing to the inside of the top buns and place them on top of the sandwiches.

Step 4: Make the Garlic Herb Butter

Melt the butter in a small microwaveable bowl and mix in all the herbs.

Step 5: Bake

Brush the butter mixture over the top of the rolls. Bake for 20 minutes until the rolls are golden and the cheese has melted. Remove the sliders, brush with more butter mixture, and enjoy!

To make the garlic herb butter, melt the butter in a small microwaveable bowl and mix in the garlic and herbs.

Ingredients
  

Reuben Sliders

  • 1 pound corned beef, thinly sliced
  • 12 slices Swiss cheese
  • ½ cup sauerkraut
  • 1 cup thousand island dressing
  • 12 Hawaiian sweet rolls

Garlic Herb Butter

  • ¼ cup melted butter
  • ½ teaspoon garlic salt
  • ½ teaspoon parsley
  • ½ teaspoon oregano
  • ½ teaspoon basil

Instructions
 

  • Preheat the oven to 350 degrees and lightly spray a baking sheet with non-stick cooking spray.

Reuben Sliders

  • Slice Hawaiian rolls in half lengthwise and place bottom buns on the prepared baking sheet.
  • Spread a layer of thousand island dressing over the bottom buns.
  • Place 6 slices of Swiss cheese over the dressing.
  • Roll up the corned beef and place over the cheese using all of the corned beef.
  • Spoon sauerkraut over the corned beef, drizzle additional thousand island dressing over the meat, follow by adding the remaining Swiss cheese slices.
  • Spread more dressing over the top buns and replace on top of the cheese.

Garlic Herb Butter

  • In a small microwave safe bowl, melt butter.
  • Add all of the seasonings, stir to combine.
  • Brush butter mixture over the top buns and bake for 20 minutes.
  • Remove from the oven and brush remaining butter mixture over the top.
  • Serve hot and enjoy.
