Buffalo Chicken Quesadilla

This cheesy buffalo chicken quesadilla combines deliciously seasoned shredded chicken breast with buffalo wing sauce and lots of cheese all stuffed in flour tortillas and fried until the cheese is hot and gooey. Easy, delicious, and a favorite way to enjoy a hearty chicken quesadilla recipe.

I love taking my favorite Mexican dishes and giving them an American twist. Fancy people call it fusion, but I just call it delicious. From taco casserole to this buffalo chicken quesadilla and everything in between, I just have so much fun combining Mexican and American flavors. And that’s what this recipe is all about. I’ve been serving it up to friends and family for a few years, but I just never got around to putting it on the blog. Honestly, I make so many kinds of dishes that I sometimes forget to put some of them here. That changes today because these quesadillas are just too good to keep to myself!

Buffalo Chicken Quesadilla

These delicious quesadillas take the sensibilities of one of my favorite Mexican foods and combines them with one of my favorite appetizers – buffalo wings. Tender, white meat chicken is slathered in tangy, zesty Buffalo sauce, then it’s combined with even more delicious seasonings and melty Monterey Jack cheese. Then it’s all wrapped up in a flour tortilla and heated to zesty, melty perfection. Every bite is an explosion of flavor, but it’s not a lot of work. My favorite combo!

How to Make This Buffalo Chicken Quesadilla Recipe

Making these quesadillas is just as easy as gathering up the ingredients. It only takes a few minutes and a few simple steps.

Step 1: Boil and Shred the Chicken

Boil the chicken breasts until they’re no longer pink. Then, drain and transfer them to a bowl and shred the chicken.

Step 2: Make the Buffalo Chicken

Add the shredded chicken and seasonings to a medium saucepan and stir to combine. Then, add the Buffalo sauce, stir, and cook over medium heat until hot.

Step 3: Construct the Quesadillas

Heat the tortillas one at a time in a large pan over medium heat. Then, sprinkle a layer of shredded cheese followed by the buffalo chicken mixture, and then more cheese onto half of the tortilla. Fold the tortilla in half over the filling. 

Step 4: Heat

Continue to heat the folded quesadilla in the pan and use a spatula to flip the quesadilla over until the tortilla is golden-brown on both sides and the cheese inside is melted. Serve with additional buffalo wing sauce, ranch dressing, or sour cream for dipping. Enjoy!

How to Store and Reheat Chicken Quesadillas

First and foremost, never store constructed quesadillas. The tortillas will get soggy. Instead, store your chicken leftovers separately in an airtight container in the fridge for up to 3 days. Then, construct the quesadillas after you’ve heated up the chicken.

To reheat the chicken, place the mixture in a saucepan on medium-low heat and heat it until the chicken is heated through.

Ingredients
  

  • 12 ounce buffalo sauce
  • 2 boneless skinless chicken breasts
  • 1 yellow onion, diced
  • 2 teaspoons pepper
  • 2 teaspoons Slap Ya Mama
  • 2 teaspoons paprika
  • 16 ounces Monterey Jack cheese, shredded
  • 4 large tortillas

Instructions
 

  • In a medium saucepan filled with water, boil chicken until no longer pink.
  • Drain water and add chicken to a medium bowl and shred chicken.
  • Add chicken and seasoning to a medium saucepan, stirring to combine.
  • Pour in buffalo sauce, stir and heat over medium heat until hot.
  • Using a large frying pan over medium high heat, heat tortillas up one at a time.
  • Add a layer of shredded cheese on half of the tortilla, followed by chicken mixture and then more cheese.
  • Fold tortilla in half and fry until golden on both sides and cheese is melted.
  • Remove from pan, slice into three triangles and repeat with the remaining tortillas.
  • Serve with your favorite dipping sauce.
