This veggie and egg fried rice is a quick, no-fuss meal that comes together in just a few minutes. Chunky vegetables, fluffy rice, and soft scrambled eggs are tossed together in a savory sauce to create this healthy and wholesome dish that is perfect for a family weeknight dinner.

I’ve recently been experimenting with a lot of Asian recipes. I’m a big fan of Asian takeout, but of course, homemade is so much better.
My beef and pepper rice bowls were a big hit, and my chicken lo mein is now on rotation in my household.
Inspired by how much everyone loved these Asian flavors, I decided to try a simple, classic rice dish that everyone would enjoy. And here we are!

Ingredients For the Fried Rice Recipe
- Rice: White rice or brown rice- choose whatever you like. Packaged rice is good too!
- Garlic: For that savory deliciousness. Fresh minced garlic is the best- garlic powder doesn’t even get there!
- Onion: To team up with the garlic and lend the fried rice a nice bit of flavor.
- Mixed vegetables: Carrots, green beans, cabbage, bok choy, broccoli, baby corn, and bell peppers are all great choices. I also added some green onions to garnish and for that Asian flavor.
- Eggs: To make the dish more filling and for that bit of protein too.
- Sesame seeds: For a bit more of that Asian deliciousness.
- Soy Sauce: For that pop of color and rich, umami goodness. Use dark soy sauce for best results.
- Butter: You could use oil here, but there’s just something about the rich saltiness of butter that takes the dish to the next level.
- Black pepper: Just a pinch, for that spicy kick.

- The swap the eggs and butter with tofu and vegan butter, and you’ve got a vegan-friendly recipe.
- While I have a separate mouth-watering chicken fried rice recipe, you can basically add shredded chicken on top if you’re in a time crunch and still want to have a delicious and filling meal.
- By adding both tofu and chicken, you can make this a protein powerhouse. Depending on the portion, you can get as much as 30% of your daily protein needs in one serving!
- Chop some fresh kimchi on top of the whole thing to add a flavor boost and get kimchi fried rice!
- Shrimp, with a splash of oyster sauce is also a great seafood twist to add to this classic fried rice.
How to Make Fried Rice
- Step 1: In a skillet over medium-low heat, saute the onions, green onions, garlic, and mixed veggies in butter. Remove them and set aside.
- Step 2: Next, add the eggs to the skillet and scramble them. Set them aside as well.
- Step 3: Meanwhile, cook the rice according to the package instructions and set it aside.
- Step 4: Melt the butter over medium heat in the skillet and add the rice, eggs, veggies, soy sauce, pepper, and sesame seeds. Mix everything well.
- Step 5: Keep cooking for a few minutes and stir occasionally. Serve hot.

How to Store Leftover Egg Fried Rice
Your leftover egg fried rice can be refrigerated and stored in an airtight container for up to 3 days.
To reheat, simply add a splash of water to it and microwave it for a few 3-5 minutes, pausing every 30-40 seconds.

- Let the fried rice rest in between the stirs (in a non-stick skillet) to let it brown on the bottom. This makes the rice nice and crispy.
- Remember to use good quality rice for this recipe. Aged rice is best, because it is nice and fluffy.
- Avoid overcooking the rice. You’ll want to use rice that is almost cooked, but not too soft and mushy.
- Rinse the rice thoroughly and remove all the starch before you cook it. This will get it nice and fluffy, just the way you want.
- To add that authentic Asian flavor to the dish, drizzle a bit of sesame oil over the rice while you’re tossing it around in the skillet.
- To spice up the fried rice, add a dash of your favorite hot sauce into it along with the soy sauce and give it all a good toss.
How to Serve the Egg Fried Rice
This easy and filling fried rice is a great light meal on its own, but I would highly recommend pairing it with a nice side like orange teriyaki chicken or some sweet and sour chicken.
If you’re looking for a quick side option, you can make some Air Fryer frozen egg rolls and team them up with the rice.
