Corn is an incredibly versatile vegetable, but so many people never play with it. I think that’s a shame, which is why I’m sharing a creative corn rib recipe with you today. This recipe is a unique take on corn on the cob that’s baked instead of boiled and cut into spears to create “ribs” when they come out of the oven. I’ve been making this delicious recipe for quite a while, and it’s the perfect thing for weeknight meals or weekend parties, BBQs, or potlucks.

Corn Ribs

This easy recipe starts with ears of corn that are cut lengthwise into long strips. Then, I season them with a blend of Cajun seasoning, garlic salt, pepper, and paprika and bake them until they’re perfectly tender and juicy. When they’re done, I slather them in butter or serve them with dipping sauce. In either case, they’re absolutely delicious and perfect for any occasion.

Why You’ll Love This Corn Ribs Recipe

  • They are easy to make and only take a few simple ingredients.
  • They’re absolutely delicious and are a family favorite way to enjoy corn on the cob.
  • They’re oven baked so the corn gets crispy on the outside and tender on the inside, and are super flavorful with the zesty blend of seasoning.
  • They make the perfect side dish or appetizer recipe that everyone will enjoy.

Corn Ribs Ingredients

You’ll only need a handful of simple ingredients to make this recipe, and most of them are probably in your kitchen already. Anything you don’t have is available at your grocery store.

  • Ears of corn are the star of the show so it’s important to use fresh, sweet corn.
  • Kinder’s red jalapeno garlic adds a touch of heat and smokiness. If you don’t have this seasoning, you can use a mixture of smoked paprika and cayenne pepper.
  • Olive oil helps to coat the corn and prevents them from sticking to the baking dish.
  • Slap Ya Mama is a Creole seasoning that adds a lot of flavor, and it’s a blend of cayenne pepper, garlic, onion, salt and black pepper.
  • Paprika adds a smoky flavor to the corn.
  • Garlic salt adds garlicky flavor.
  • Black pepper adds a peppery taste to the corn ribs.
  • Melted butter add richness and moisture to the corn.

How to Make Corn Ribs in the Oven

Making these corn ribs is super easy. You’ll be in and out of the kitchen in no time, and you’ll have some delicious corn that everyone will love.

Step 1: Combine the Seasonings

Stir all the seasonings together in a small bowl.

Step 2: Season the Corn

Add the corn ribs to a large bowl and toss with oil. Then, place them on a baking sheet and sprinkle them with the seasoning mix. Spray with oil again.

Step 3: Bake

Bake for 20 to 22 minutes at 425 degrees. Serve with melted butter or your favorite dipping sauce.

Recipe Tips

  • Use a very sharp knife to make cutting the corn easier.
  • The safest way to cut the corn into spears is to cut the corn in half lengthwise, then cut the halves in half again lengthwise with the flat side down.
  • Combine your seasonings in a bowl before adding them to the corn to ensure an even distribution of seasonings.

Variations

  • You can use whole baby corn for this recipe. You can eat the entire thing!
  • You can grill or smoke the ribs, as well.
  • Try grilling, smoking, or baking whole ears of corn with the seasonings.
  • For an extra spicy version, add cayenne pepper or red pepper flakes.

These delicious corn ribs are perfect brushed with melted butter or dipped in your favorite dipping sauce. In addition, they make the perfect side for all of your summertime favorites like BBQ, smoked meat, grilled meat, and potluck dishes.
