A quick and easy one-pot meal, smoked sausage and green beans with corn boasts a rustic, southern flavor that is the perfect side dish recipe or simple weeknight dinner that can be on the table in about 30 minutes.

If you love easy, hearty meals that are ready in a flash, then you’re going to adore this one pot meal. I was a nurse for years and as a mom I’ve always appreciated meals that can feed a hungry family and also don’t take a ton of time or effort. After all, when you’re caring for the sick and a houseful of people, time is at a premium. That’s why this dish has been a favorite of mine for so many years. It uses a few simple ingredients, it’s hearty enough to feed even large families, and it’s so quick and easy. It’s a winner all the way around!

Smoked Sausage and Green Beans with Corn

This delicious recipe is chock full of sausage – a full two pounds of it, in fact. To that, I add diced onions, garlic, whole kernel corn, and green beans. Then I season it with a zesty Cajun blend, add butter for richness, and cook it all until the veggies are tender, and the entire house smells like a smoky sausage wonderland of flavor. The entire thing takes about 30 minutes from start to finish, and it’s so hearty, you can make a couple of meals out of it!

This recipe uses so few ingredients that almost all of them are already in the name. It only takes a quick trip to the store to get everything you need!

  • Smoked sausage
  • Onions
  • Cloves garlic
  • Green beans
  • Whole kernel corn
  • Slap Ya Mama seasoning
  • Black pepper
  • Butter

How to Make Smoked Sausage and Green Beans with Corn

Making this recipe couldn’t’ be simpler. You only need one pot or skillet and a few minutes. That’s all there is to it!

Step 1: Cook the Sausage

Melt butter in a large cast-iron pan or skillet over medium heat. Then, cook the sausage until it’s browned on both sides.

Step 2: Add Garlic and Onions

Add the onions and garlic and cook for another couple of minutes.

Step 3: Season and Cook the Vegetables

Add the seasoning and pepper to the skillet and stir. Then, add the rest of the butter, corn, and green beans and cook until the vegetables are heated through, stirring frequently. Enjoy!

  • The most effective way to brown your sausage is to use tongs and flip the sausage individually.
  • Only cook your sausage and vegetables over medium heat. You don’t want to scorch your butter.
  • A large cast-iron skillet or a Dutch oven are the two best options for making this recipe.

  • You can add cubed potatoes to this dish for an even heartier meal.
  • Use your favorite brand or variety of sausage like beef, turkey sausage, chicken sausage are examples of different types of sausage that work well with this recipe. There are so many out there! 
  • Add any of your favorite canned vegetables to this dish.

Ingredients
  

  • 2 pounds smoked sausage, cut into ¼-inch slices
  • 1 cup onions, diced
  • 2 cloves garlic, minced
  • (2) 15 ounce whole kernel corn, drained
  • (2) 15 ounce green beans, drained
  • 1 teaspoon Slap Ya Mama seasoning
  • 1 teaspoon black pepper
  • ½ cup butter, divided

Instructions
 

  • In a large cast iron pan or large skillet, melt butter over medium heat.
  • Add butter and sliced sausages. Stir and cook until sausage is browned on both sides.
  • Add onions and garlic and continue cooking for another couple minutes.
  • Sprinkle seasoning and pepper into the pan, stir, and then add remaining butter, green beans and corn.
  • Cook until vegetables are heated through, stirring frequently.
  • Serve hot.
