Easy Halloween Cookies

These easy Halloween cookies are soft, chewy, sweet, and spookily festive. Basic cookie dough and a bag of Fancy Halloween Baking Confetti come together to create cookies that take almost no time or effort to make!

When most people think about holiday recipes, they probably think of Thanksgiving and Christmas tables loaded with turkey, ham, sides, and desserts. I know I do. However, I never forget one of my other favorite holidays – Halloween.

I love, love, love Halloween. I’m not a fan of the blood and gore that so many people enjoy, but I do love the cute side of the holiday. Animated movies, ghosts, and cute creatures are all so much fun for me, and so are adorable Halloween recipes like these Halloween sugar cookies and mini Halloween cookies.

I just enjoy the colors and the family-friendly fun that’s spooky but not scary. To that end, I’ve added this new cookie recipe to my All Hallows Eve rotation. These super-easy Halloween cookies are made with a basic dough and an all-in-one Halloween mix-in bag full of sprinkles and candies. It couldn’t be simpler!

Variations

  • Nuts: Walnuts and pecans both work well in these cookies.
  • No Nuts: If you’re not a fan of nuts, just leave out the walnuts.
  • Holidays: Change the sprinkles to chocolate candies with holiday-appropriate colors to make cookies for any occasion.
  • Gluten-Free: Use a high-quality 1:1 gluten-free baking flour for cookies that everyone at any party can enjoy.

How to Make These Easy Halloween Cookies

Whisk the dry ingredients in a medium mixing bowl and set aside.

Beat all the wet ingredients except the eggs in a large mixing bowl. Then, beat in the eggs.

Gradually mix the dry ingredients into the wet until combined. Then fold in the nuts and candies.

Use a 2-inch cookie scoop to drop rounds of dough onto two prepared baking sheets.

Bake at 375°F until the edges are golden and the centers are still a bit soft.

Cool the cookies on the cookie sheets for a few minutes. Then, transfer them to a wire cooling rack to cool completely.

Tips

  • Be sure your baking soda is fresh, or your cookies won’t rise.
  • Mix your batter ingredients until just combined. Overmixing will make the cookies tough.
  • Use a folding motion to mix in your confetti. Again, this limits the chances of a tough cookie.
  • Be sure to remove your cookies as soon as the edges begin to brown. They’ll be underdone in the center. That’s okay! That’s what you want.

Why were my easy Halloween cookies so flat?

If your leavening is expired, your cookies won’t rise, resulting in them spreading too much and becoming super flat.

What kind of mix-ins can I use with easy Halloween cookies?

You can use almost anything you can think of in these easy Halloween cookies. Chocolate candies, chopped candy bars, or Halloween favorites like candy corn all work.

Why weren’t my cookies soft?

Cookies that aren’t soft can be caused by using too much flour, overmixing the dough, or overbaking the cookies. Be sure to measure your flour correctly, mix the dough until just combined, and remove the cookies a couple of minutes before they’re finished baking, letting the heat of the baking sheet finish baking them.

Ingredients
  

  • 2 ½ cups all purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup butter
  • ¾ cup light brown sugar, packed
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoon corn syrup
  • 2 large eggs
  • 8 ounce bag Fancy Halloween Baking Confetti (available at Walmart)
  • 1 cup walnuts, chopped

Instructions
 

  • Preheat the oven to 375° and line two baking sheets with parchment paper. Set aside.
  • In a medium mixing bowl, whisk flour, baking soda and salt. Set aside.
  • In a large mixing bowl, beat on medium speed, butter, brown sugar, sugar, vanilla and corn syrup together until creamy.
  • Beat eggs into the wet mixture.
  • Gradually add flour a little at a time until all the flour mixture is mixed well.
  • Stir in baking confetti and walnuts.
  • Using a 2 inch cookie scoop, drop on prepared baking sheets.
  • Bake for 9-10 minutes or until the edges start to brown.
  • Remove from the oven and let sit for a couple minutes on the cookie sheet, then transfer to a wire rack to cool.

Notes

Storage
  • Storage at room temperature in an airtight container for up to 2 weeks. 
  • Freeze in single layers, separated by wax paper, in a freezer-safe, airtight container for up to 3 months. 
  • Bring to room temperature before serving.
