Supreme Pizza Stuffed Manicotti

Supreme pizza stuffed manicotti stuffs manicotti with mozzarella, pepperoni, ground beef, bell peppers, black olives, jalapenos, and pizza sauce, tops them with more sauce, cheese, and pepperoni, and bakes it all until melty. Yum!

  • Preheat the oven to 375 degrees.
  • Bring a large pot of water to a boil over medium high heat.
  • Once boiling, cook the manicotti noodles for 8 minutes. Drain and place the noodles on wax paper or parchment paper so the noodles won’t stick to each other.
  • In a large frying pan over medium heat, add ground beef. Cook and once meat starts to brown, add onions, and cook until meat is no longer pink and onions are translucent.
  • Add seasonings, stir and continue to cook for a couple more minutes.
  • Pour pizza sauce into beef mixture, stir to combine and cook until heated through.
  • In a medium bowl, add 1 cup of the mozzarella, ½ cup Parmesan cheese, pepperoni, olives, bell pepper, and ¾ cup of beef mixture sauce. Stir to combine.
  • In a 9 x 13 baking dish, add a cup of the beef sauce mixture to the bottom and spread evenly.
  • Carefully stuff each manicotti with the mixture and place in the baking dish.
  • Cover with the remaining sauce, Parmesan, mozzarella cheese, and reserved pepperoni slices.
  • Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until the cheese is melty and beginning to brown.

Notes

Tips
  • Be sure your boiled noodles don't touch, or they'll stick together.
  • Your noodles should be a bit firmer than al dente. This allows you to stuff them without breaking them and prevents them from getting too soft as they bake.
  • A spoon just a bit smaller than the manicotti opening is the perfect size for stuffing the noodles.
  • Always wash your hands after handling hot peppers and never touch your face.
