Rib Eye Nachos

Are you a nacho lover and just can’t get enough? These Rib Eye Nachos are about to make you forget that any other type of nachos even exists. One bite of this pile of gooey goodness and you’ll forget that need to ever eat with silverware ever again!

Nachos are such a fun food to eat. And really, when it comes down to it, what are they? Is that delicious pile of nachos an appetizer, a meal, or just a snack? And in all reality, they’re whatever you want them to be.

We’ve eaten them for all the above reasons without having any plan of stopping anytime soon. Depending on your hunger, you can easily make this dish and enjoy it all to yourself as well. (because sometimes, you just don’t have to want to share!)

What are some other great topping choices for nachos?

Nacho toppings are some of the best toppings. If you’re someone who literally eats nachos for the toppings, you’re my kind of people. Piling toppings so high that the chip is barely strong enough to hold onto all the weight is one of the best parts of eating nachos! And these are great to pile on your favorite toppings too! So pile on the toppings of your choice to make these nachos even more delicious.

Just in case you’re looking for even more delicious toppings, check out some of these great ideas:

  • Sour cream
  • Refried beans
  • Black beans
  • Nacho cheese
  • Jalapenos
  • Onion
  • Diced tomatoes
  • Cilantro
  • Black olives

And those are just a few. If you love toppings, you can continue to try and pile on as many as you think you can eat! Toppings are such a simple way to change up the taste and the flavor of your nachos in such an easy way. (and, it’s best to use tortilla chips that are on the thicker side.)

Can you warm up these nachos in the oven?

You sure can. While this recipe calls for popping the plate of nachos into the microwave, you can just as easily use your oven at home as well. Just line a baking sheet with foil, place the tortilla chips in a single layer, add the steak, both types of cheese and a slice of jalapeno on each chip. Bake in the oven on 350 degrees until the cheese has melted.

What happens if my tortilla chips are soggy?

As this nacho recipe stands right now, there aren’t really any ingredients that are added to it that would make your nacho’s soggy. BUT if you add in tomatoes or any other type of topping that has a liquid, there’s a chance that the chips can and will become soggy because of the liquid that is going to come off those food items.

To make certain that this doesn’t happen, just do your best to drain those toppings before you add them on top. This will keep the chips as crisp and as fresh as possible so that you can enjoy every single crunchy bite.

Are you ready to make this super simple steak nacho recipe? You’re going to love how quick it all comes together! This is a great recipe to serve as an appetizer during the Super Bowl, any game day gathering, as a simple appetizer or an easy weeknight meal.

How To Make Rib Eye Nachos

  1. Place tortilla chips on microwave safe plate.
  2. Place a spoonful of diced rib eye on top of each chip.
  3. Add a heaping spoonful of each type of cheese on top of meat.
  4. Top each chip with a jalapeno slice.
  5. Place in microwave until cook until cheese has melted, approximately 60-75 seconds.
  6. Carefully remove and enjoy with your favorite toppings and dipping sauce.

As you can see, this recipe will literally take minutes of time to make and will have your taste buds and your tummy happy in no time at all. Since you’re using leftover rib eye meat, there’s no reason why you shouldn’t have this recipe cooked up and ready in less than 5 minutes of time. And when you’re ready to sit down and enjoy a bite to eat, the less amount of time that you have to wait, the better!

Ingredients
  

  • 2-3 cups leftover rib eye, diced into ½" pieces (see notes for my garlic lime steak bites recipe)
  • 15-18 tortilla chips
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups Monterey Jack cheese, shredded
  • Optional: jalapeno slices, salsa, avocado salsa, fresh cilantro, sour cream, onions

Instructions
 

  • Place tortilla chips on microwave safe plate.
  • Place a spoonful of diced rib eye on top of each chip.
