Mashed potatoes are one of the best side dishes you’ll ever have. This classic side can be found on almost every table across America and many parts of the world at least weekly. I’ve loved them since I was a kid, and I’ve been making them almost as long. One of my favorite ways to make them is in the crock pot. Using the crock pot, I can just set the potatoes and forget about them until it’s time to mash them. And the best part is that they’re cooked perfectly every time.

Crock Pot Potatoes

This easy recipe starts with potatoes cut into 1-inch chunks and slow-cooked until they’re fork-tender and perfect for mashing. Then, I mash them with butter, cream cheese, and seasonings until they’re extra smooth, creamy, and loaded with flavor. Finally, I stir in shredded cheddar cheese and top them with sour cream, green onions, and bacon. When I’m all done, I have the most delicious fully loaded mashed potatoes you’ve ever had.

Step 2: Mash the Potatoes

Drain the potatoes and return them to the crock pot. Add butter, cream cheese, and seasonings and mash with an electric mixer until combined. Then, stir in the shredded cheese.

Step 3: Add the Remaining Ingredients

Top the potatoes with sour cream, green onions, and bacon. Enjoy!

Recipe Tips

  • The best potatoes to use for this recipe are russet or Yukon Gold.
  • If you don’t like the idea of using a mixer in your crock pot, you can place the potatoes in a large mixing bowl.
  • 1-inch is the best size for your potato cubes. They’ll cook evenly and be easier to mash.

Variations

  • For a different kind of mashed potatoes, try this recipe with sweet potatoes.
  • For a vegan version, use vegetable broth and vegan cheese, sour cream, and bacon.
  • For smooth, creamy, classic mashed potatoes, omit the cheese, sour cream, bacon, and onions.

Recipe FAQ

Can you put raw potatoes in a slow cooker?

Absolutely. Slow cookers are designed to cook slowly. They’re mean for raw ingredients to be added and then cooked for several hours on low heat.

Do potatoes need to be submerged in a slow cooker?

Not always. Potatoes should be submerged if you’re making stew, casserole, or mashed potatoes, If they’re steamed in foil wrappers, they don’t need to be submerged.

How long does it take for potatoes to soften in a crock pot?

That depends on how the potatoes are cooked. Large baked potatoes can take up to 4 to 5 hours on high or up to 10 hours on low, while diced potatoes like these take between 3 ½ to 4 hours.

Will potatoes overcook in a slow cooker?

Yes. If you slow cook potatoes for too long, they can get tough and even burn.

How do you keep potatoes from getting mushy in a crock pot?

To keep potatoes from getting mushy, don’t overcook them. If you’re adding diced potatoes to soup or stew in a slow cooker, add them in the last 3 to 4 hours of cooking so they become fork-tender, not mushy.
