Sausage pancakes on a stick are a fun and easy breakfast recipe with two classic breakfast favorites in one simple recipe – a perfectly fried pancake paired with a juicy sausage link.

I’m a big breakfast fan. For my entire life, breakfast has always been the meal that I love the most. I just love the combination of sweet and savory flavors on a weekend. Sausage, pancakes, bacon, eggs – I love them all. One of my favorite ways to enjoy pancakes and sausage is on a stick. Yes, on a stick. If you’ve never had a sausage pancake on a stick, just think of a breakfast-themed corndog, and you’ve got the right idea. It’s a sausage link on a stick dipped in pancake batter and then fried, and it’s AH-mazing!

Sausage Pancake on a Stick

This recipe starts with sausage links that I cook in the skillet until they have that nice, browned exterior and juicy interior. Then, I make a homemade pancake batter and dip the links. Finally, I deep fry the coated sausage until the pancake batter is golden brown. When it’s all done, I have light, fluffy pancakes with juicy, perfectly cooked sausage, and it’s all on a stick!

How to Make Sausage Pancake on a Stick

Making this recipe is just as easy as gathering up the ingredients for it. Every part of it is simple and even beginners can do it.

Step 1: Cook the Sausage

Cook the sausage in a skillet over medium heat according to the package directions.

Step 2: Make the Pancake Batter

Whisk the flour, sugar, baking soda, salt, and baking powder together in a medium bowl. Then, whisk the eggs and buttermilk together in a small bowl. Add the wet ingredients to the day and gently stir until combined. The batter will be lumpy.

Step 3: Fry

Place each sausage link on a skewer and dip it into the pancake batter. Deep fry in hot oil in a pot or deep fryer until golden brown on all sides. Transfer to a plate lined with paper towels and repeat until all sausage pancakes on a stick are finished. Enjoy with powdered sugar and maple syrup.

You absolutely can. Although I prefer to cook my own sausage for this recipe, you can heat up pre-cooked sausage. It works just as well.

How long do you deep fry pancake sausage on a stick?

It takes about 1 ½ minutes to deep fry pancake sausage on a stick.

What can you use if you don’t have apple skewers?

You really do need long apple skewers for this recipe. Shorter options like toothpicks will not hold. If you don’t have skewers, however, you can use tongs to simply dip the sausage in the pancake batter and drop them into the oil. They won’t be hand-held, but they will be just as delicious.

Can you use store-bought pancake mix?

Yes, you can. Store-bought pancake mix will work just as well for this recipe as homemade pancake mix.

Can you freeze leftover sausage pancakes on a stick?

Absolutely. These sausage pancakes on a stick freeze well and will last for up to 3 months in the freezer.

How to Store and Reheat Leftover Sausage Pancakes on a Stick

Refrigerated these sausage pancakes on a stick in an airtight container for up to 4 days. For longer storage, freeze them for up to 3 months in an airtight, freezer-safe container or heavy-duty freezer bag.

To reheat, place the sausage pancakes on a stick on a non-stick baking sheet and bake at 350 for about 10 minutes or until heated through.

Ingredients
  

  • 1 cup all purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • 1 large egg
  • 1 cup buttermilk
  • 12-14 sausage links, I used Johnsonville Original Recipe Breakfast Sausage Links
  • Butter and maple syrup as desired
  • 1½-2 cups vegetable oil, for frying
  • 12-14 apple skewers

Instructions
 

  • Heat a frying pan over medium heat and cook sausage links according to package directions.
  • Remove from the pan and place on a paper plate lined with paper towels to absorb any excess grease.
  • In a medium bowl, whisk flour, sugar, baking soda, salt, and baking powder together.
  • In a small bowl, whisk eggs and buttermilk until combined.
  • Pour wet ingredients into dry ingredients and gently stir. Batter will be lumpy.
  • Using a large saucepan, heat oil over medium high heat.
  • Place an apple skewer in one end of all the sausages and dip each sausage into the pancake batter and place into the hot oil holding it safely over the hot oil.
  • Deep fry until golden brown on all sides.
  • Remove from oil, place on a plate lined with paper towels and repeat until all sausage pancakes on a stick are cooked.
  • Serve hot with powdered sugar and maple syrup.
