Maple Pecan Sweet Potatoes

If you’re looking for the perfect holiday side dish for Thanksgiving or Christmas, you aren’t going to find one better than these Maple Pecan Sweet Potatoes. Packed with just enough sweetness and crunch, these will keep you coming back for more!

Maple Pecan Sweet Potatoes are twice baked, filled with brown sugar, cinnamon, nutmeg, maple syrup and chopped pecans.

Twice Baked Sweet Potatoes

What I love most about this delicious sweet potato recipe is that I really don’t have to do a ton of prep work. The biggest thing that I really have to worry about is making certain to scrub the outside of my sweet potato really well before popping it into the oven. Once I make certain that I’ve got all the dirt and germs off, it’s really smooth sailing from there.

I like to think of these as a fun little treat to have as a side dish option during the holidays. Not only do they allow everyone to have a bit of sweetness to go along with their meal, but they’re also fun to eat, too. There’s just something delicious about scooping out the sweet insides of these sweet potatoes that have me coming back for more time and time again.

Maple Pecan Sweet Potatoes are full of brown sugar, cinnamon, nutmeg, maple syrup and chopped pecans.

Can you use other varieties of nuts besides pecans in this dish?

You can! As long as no one has any type of allergies that you have to worry about, I would recommend chopped up almonds, walnuts or even cashews. Just make certain that you’re aware of if they have salt added to them or not. While some salt can combine well with the sweet, it can be overbearing at times, too.

What type of oil do you use for the outer layer of the sweet potatoes?

Any type of oil is actually fine, but I really like to use coconut oil. It has some fun added health benefits and gives the outer skin of the sweet potato a nice, crisp taste. (and some extra sweetness as well!) Coconut oil tends to withstand heat really well so I just like how it adds a nice element to the potato skin.

Ingredients Needed for Maple Pecan Sweet Potatoes

  • Sweet potatoes
  • Maple syrup
  • Pecans
  • Brown sugar
  • Cinnamon
  • Nutmeg
  • Milk, oil

 

How To Make Maple Pecan Sweet Potatoes

  • Lay sweet potatoes on a baking sheet and poke all over with a fork.
  • Brush with oil, then bake for 45 minutes.
  • Remove from oven, cut a wedge in the top of each potato, scrape out the insides.
  • In a large bowl, mash together potato, brown sugar, nutmeg, cinnamon, maple syrup, milk, and pecans with two forks or a pastry cutter.
  • Re-stuff potatoes, top with a little more pecans, and bake again for 20 minutes.
  • Drizzle with maple syrup and serve.

Do I need a hand mixer for this recipe?

You don’t! Once you cook the sweet potatoes in the oven for a bit, they’re going to be nice and soft to be able to easily mash. Save yourself the stress and worry about dirty dishes and leave the hand mixer in the drawer.

How Do You Store Leftover Sweet Potatoes

If you happen to have any of these delicious potatoes leftover, you can easily store them for later. There are actually a couple of ways that you can do this as well.

First, you can store them as-is, with the skin on them and everything. This will keep all the delicious flavor but just be prepared that the outside of the skin probably won’t be as crispy as it was when they were cooked fresh. They’ll still eat just fine, but there will be that bit of variance.

If you don’t like that choice, you can actually just scoop out the insides and store them that way. Just toss away the skins if you don’t want to have those as leftovers and that way you can easily reheat up the goodness with ease. Just make sure to store them in an airtight container or resealable baggie in the fridge. They should be good for approximately 3-4 days.
