These hearty and delicious ham egg and cheese crescent rolls are loaded with fluffy scrambled eggs, diced ham, onions, bell pepper, and lots of cheese, nestled in the center of buttery, flaky crescent rolls, and baked to golden perfection. It’s an easy and delicious breakfast recipe the whole family will enjoy.

These delicious breakfast crescent rolls are hearty, meaty, and cheesy. They’re an easy, delicious way to start the day off with a full belly and happy tastebuds! These breakfast crescent rolls have been a staple of my breakfast recipe rotation for years, and I don’t see that ever changing. I used to make them quite often when my kids were at home, and I still do now that it’s just me and my guy. We both love the flavor of these crescent rolls, and they’re especially great for busy mornings when we need a breakfast we can grab as we head out the door.

Ham Egg and Cheese Crescent Rolls

These ham egg and cheese crescent rolls start with a mix of ham, bell pepper, and onions that I cook until the veggies are tender and scrambled eggs. Then, I roll out crescent dough and cut it into 4 squares. I top them with cheese, scrambled eggs, the ham mixture, and more cheese. Then, I fold them over and bake them until golden brown. It’s a quick and easy breakfast recipe that’s hearty, satisfying, and so delicious.

How to Make Ham Egg and Cheese Crescents

Making these breakfast crescent rolls is a breeze. It only takes a few minutes, a few simple steps, and basic kitchen knowledge.

Step 1: Prep

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

Step 2: Scramble the Eggs

Whisk the eggs, milk, garlic powder, and black pepper in a medium bowl. Then, scramble them over medium heat until almost done. Set aside.

Step 3: Cook the Ham

Cook the diced ham, bell pepper, and onions in a large frying pan over medium heat until the veggies are tender.

Step 4: Prepare the Crescent Dough

Gently unroll the crescent dough on a lightly floured surface and cut it into 4 equal squares. Pinch the perforated diagonal lines crossing each square to make 4 solid dough sheets.

Step 5: Fill

Sprinkle shredded cheese onto each square. Then, add the scrambled eggs to each square and top them with ham. Top with more shredded cheese. Bring two corners of each square together and seal.

Step 6: Bake

Whisk the egg and water in a small bowl. Brush the egg wash over the dough and bake for 25 to 30 minutes or until golden brown. Enjoy!

Ingredients
  

  • 8 large eggs
  • ¼ cup whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 ham steak, chopped into small pieces (approximately 2 cups)
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 1 tablespoon vegetable oil
  • 2 cups sharp cheddar cheese, shredded
  • 2 containers Pillsbury refrigerated crescent dinner rolls

Egg Wash

  • 1 large egg
  • 1 tablespoon water

Instructions
 

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • In a medium bowl, whisk eggs, milk, garlic powder and black pepper together, and scramble over medium heat until almost done. Eggs can still be a bit wet because they will fully cook in the oven.
  • In a large frying pan, heat oil over medium heat. Add diced ham, bell pepper, and onions, stir, and cook until veggies are tender.
  • Gently unroll the crescent dough, on a lightly floured surface, and cut into 4 equal squares.
  • Pinch the perforated lines together of the two triangles that make up that square..
  • Sprinkle shredded cheese over each crescent square.
  • Add scrambled eggs to each square.
  • Next, spoon the ham mixture over the eggs.
  • Add additional shredded cheddar cheese.
  • Bring two corners of the crescents together, pinch, and seal.
  • In a small bowl, whisk together egg and water.
  • Brush egg wash over the crescents, and bake for 15-20 minutes or until golden brown.
