Lasagna Stuffed Manicotti

Lasagna stuffed manicotti is comfort food at it’s best! This Italian dish is loaded with three different types of cheese, ricotta, parmesan and mozzarella. All of which make this lasagna stuffed manicotti absolutely delish!

With each bite, you can count on gooey, stringy, delicious cheese. Isn’t that the best? An Italian meal that’s loaded with tons of cheese? Definitely a cheesy meal that everyone will enjoy.

Look at all this bubbly cheese! Mmmm, mmmm, mmmm! A double layer of lasagna stuffed manicotti is what I made here but making single layers works well too. Making a ton of food is usually how I cook and this lasagna stuffed manicotti will definitely serve a large crowd.

If ricotta cheese is not a favorite, cottage cheese may be substituted instead. Both types of cheese is what I use in my pasta dishes depending on what I’m making and both tastes delicious.

When preparing this meal, stuffing the manicotti is a bit time consuming but it’s so worth every minute. After mixing the cheeses into the meat mixture, spoon into the manicotti noodles filling them up and place in a baking dish. Continue stuffing and placing the stuffed manicotti into the dish. Once finished, top with remaining mozzarella cheese. Finally, cover with foil and cook until it’s heated through and the cheese is melted.

Lasagna Stuffed Manicotti

This lasagna stuffed manicotti recipe is loaded with all the classic lasagna flavor stuffed into manicotti noodles. An easy and delicious casserole recipe the whole family will enjoy.

Ingredients
  

  • 2 lbs ground beef
  • 1 lb hot Italian sausage, removed from casing
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1½ tsp oregano
  • 1½ tsp basil
  • 1 tsp salt
  • ½ tsp pepper
  • (2) 15 oz tomato sauce
  • 14.5 oz diced tomatoes
  • 12 oz tomato paste
  • 8 oz water
  • 16 oz ricotta cheese
  • ½ cup grated parmesan cheese
  • 32 oz mozzarella cheese, shredded
  • 24 manicotti pasta, cooked al dente

Instructions
 

  • Preheat oven to 350°
  • Spray a 13 x 9 baking dish with non stick spray, set aside.
  • In a large frying pan, add ground beef, Italian sausage, onions and garlic . Cook until meat mixture is browned and cooked thoroughly.
  • Drain grease and return to pan.
  • Sprinkle oregano, basil, salt and pepper over meat mixture, stir.
  • Pour tomato sauce, tomato paste, diced tomatoes and water into pan, stir. Cover and let simmer on low for 30 minutes.
  • While meat mixture is simmering, cook pasta al dente (cooked but still firm). Drain, rinse with cool water and set aside (I laid the pasta on a baking sheet until ready to fill).
  • Once meat mixture has finished simmering, pour into a large mixing bowl and let cool a bit.
  • Take some of the meat mixture and spoon into the bottom of the baking dish prior to adding the manicotti, just enough to cover the bottom of pan.
  • When meat mixture has cooled off a just a bit, add ricotta cheese and stir until mixed well.
  • Next, sprinkle parmesan cheese over meat, stir and then add ½ the shredded mozzarella cheese into meat mixture. Stir until the cheese is melted and is well incorporated.
  • Gently spoon mixture into each manicotti and place into baking dish.
  • Continue stuffing the manicotti until your baking dish is full (I doubled layered the manicotti so I only had to use 1 baking dish. You can have a single layer but will need 2 baking dishes).
  • Once you have the first layer placed in dish, sprinkle with mozzarella cheese before starting the next layer.
  • When all the manicotti pasta has been stuffed and placed in the baking dish, top with remaining mozzarella cheese, cover with foil, and cook for 60 minutes (45 minutes for single layer).
  • Remove foil and cook for 5-10 more minutes and then remove from oven and enjoy!
