When it comes to savory comfort foods, there’s nothing better in my book than chicken soup. Old-fashioned favorites like this hearty chicken noodle soup always leave my heart and belly feeling warm and full, with memories as wonderful as the flavors.
Every bite of chicken soup always brings up memories of how good it felt to eat a warm spoonful when I was sick as a kid or how my kids always loved a big bowl of it on a cold day.

How to Make One Pot Chicken Gnocchi Soup

Step 1: Add the chicken to a Dutch oven with olive oil. Sprinkle with pepper, garlic powder, and onion powder, and cook over medium heat until cooked through. Shred and set aside.

Step 2: Add more oil to the pot, and saute the vegetables over medium heat until the onions are translucent and the veggies are tender.

Step 3: Add the shredded chicken, broth, salt, pepper, and thyme, and bring to a boil.

Step 4: Stir in the gnocchi and continue boiling for 4 to 5 minutes. Then, reduce the heat and simmer for 10 minutes.

Step 5: Stir in the cream, milk, and spinach and cook until the spinach is tender.

- Pat your chicken dry with paper towels before cooking it in oil to reduce spattering.
- Stir your vegetables often while cooking them to keep the garlic from getting brown and bitter.
- Your soup should be at a low simmer, not boiling, when you add your milk and cream to prevent curdling.
- Shred your chicken while it’s still hot but safe to handle. Cool meat doesn’t shred nearly as well.

Ingredients
- 2 boneless skinless chicken breasts, cut into 1-inch chunks
- 1 teaspoon Slap Ya Mama seasoning
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon red pepper flakes
- 2 tablespoon olive oil, divided
- 1 cup white onion, diced
- 1 cup celery, diced
- ½ cup carrots, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 teaspoon Italian seasoning
- 1 teaspoon black pepper
- ½ teaspoon salt
- 16 ounces potato gnocchi
- 1 ½ cup heavy cream
- 1 cup fresh spinach, chopped
Instructions
- In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat.
- Add chicken to the pot and sprinkle with pepper, garlic powder, and onion powder.
- Cook chicken until completely cooked through and no longer pink.
- Remove from the pot, shred chicken breasts and set aside.
- Add remaining tablespoon of olive oil to the pot and add celery, onions, carrots, and minced garlic. Sauté until onions are translucent and other veggies are tender.
- Add shredded chicken, broth, salt, pepper, and Italian seasoning to the pot. Bring to a boil.
- Stir in gnocchi and continue to boil for another 4-5 minutes. Reduce heat and simmer for 10 minutes.
- Stir in heavy cream, milk, and spinach. Cook until spinach is tender, about 2-3 minutes)
