I’ve been an absolute brownie fan for the longest time, and love experimenting with different flavors and variations.
From nutty coconut pecan brownies to the festive mint chocolate brownies– I’ve tried my hands at some really fun versions of the classic chocolate brownie.
So of course, I just HAD to try my hands at this one too! And oh boy- I’m so glad I did.

Ingredients For the Cosmic Brownies Recipe
- Butter: Start with salted butter. If you’re using the unsalted version, you might need to add a bit of salt into the mix.
- Sugar: I used a mix of white and brown sugar for that caramel-like deliciousness.

- Unsweetened cocoa powder: Use good quality natural cocoa powder for best results.

Start by preheating your oven at 350 F and grease your baking dish with cooking spray or butter.
- Step 1: Whisk butter, eggs and vanilla in a large bowl.
- Step 2: Add the dry ingredients-cocoa powder, sugars and corn starch to the bowl and mix well.
- Step 3: Pour the brownie batter into a greased baking dish and bake for 25-30 minutes or until it nearly passes the toothpick test.
- Step 4: For the chocolate topping, add the chocolate chips to the hot brownies as soon as it comes out of the oven.
- Step 5: Once the chocolate chips have melted, spread out in an even layer and sprinkle the rainbow sprinkles over the melted chocolate.
- Step 6: Serve warm with a scoop of vanilla ice cream or let cool.

This is arguably the best part about basically all brownies – they taste just as good when kept in the fridge and eaten again a few days later.
If you have any leftovers, just make sure you transfer them to an airtight container before you pop them in the fridge.

To get the perfect, sharp cuts on all sides, use a super sharp knife and cut the brownies in one single motion. Also remember to wipe the blades in between cuts.
To keep the sprinkles from sinking into the frosting, add them in towards the end, after you notice that the frosting has started to harden a bit.
You sure can! Bake them up to 2 days ahead of time if you’re planning on serving them for a get-together or party. Use an airtight container to refrigerate them and get them out just a few minutes before you plan to serve.

Cosmic Brownies
Ingredients
- ½ cup butter
- ½ cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup all-purpose flour
- ½ cup unsweetened dark cocoa powder
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- 1 – 1 ½ cup milk chocolate chips
- ⅓ cup Wilton rainbow chip crunch sprinkles
Instructions
- Preheat the oven to 350 degrees and prepare an 8½ x 8½ baking dish by spraying with non-stick cooking spray. Set aside.
- In a small bowl, whisk together the flour, cocoa powder, salt, and baking soda. Set aside.
- In a large, microwave-safe bowl, melt butter. Add the brown sugar and granulated sugar to the butter and mix well.
- Next, add eggs and vanilla extract. Whisk until fully incorporated.
- Add the dry ingredients into the wet ingredients and mix just until dry ingredients are combined
- Pour batter into prepared baking dish and bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
