Cosmic Brownies

Chewy, fudgy and so much better than the store-bought version, these homemade Cosmic Brownies are sure to become your next favorite sweet treat.

They’re ridiculously easy to make, and hit the spot, every single time. 

If you’re a fan of these wrapped-up bad boys, you’ve got to try this easy kitchen version- it is SO much better. 

I’ve been an absolute brownie fan for the longest time, and love experimenting with different flavors and variations. 

From nutty coconut pecan brownies to the festive mint chocolate brownies– I’ve tried my hands at some really fun versions of the classic chocolate brownie.

So of course, I just HAD to try my hands at this one too! And oh boy- I’m so glad I did.

What I Love About the Recipe

  • These decadent and fudgy brownies are super versatile. Tweak and play around with the toppings and try different versions of the recipe. 
  • This one’s homemade, and beats any ultra processed, packaged version you might find. Plus, it tastes so much better too! 
  • Toppings! Whether it’s M&Ms, pecans or just plain old chocolate chips, you can add any (or all) toppings to make it your personal chunk of heaven. 
  • And of course, let’s not forget the nostalgia! 

Ingredients For the Cosmic Brownies Recipe

  • Butter: Start with salted butter. If you’re using the unsalted version, you might need to add a bit of salt into the mix. 
  • Sugar: I used a mix of white and brown sugar for that caramel-like deliciousness. 
  • Eggs: To make the brownies super chewy and rich! 
  • Unsweetened cocoa powder: Use good quality natural cocoa powder for best results. 
  • All purpose flour: Flour gives the brownies structure.
  • Vanilla extract: For that delicate sweetness. 
  • Chocolate Chips: A quick way to “frost” the brownies.
  • Rainbow Chip Crunch Sprinkles: These candy sprinkles are colorful and give the brownies that classic cosmic brownie look.
  • Toppings: Can be anything you’d like – the classic sprinkles, M&Ms, chocolate chips, you name it.

Variations

  • For vegetarians, replacing eggs with peanut butter does the trick, but you’ll just need a bit of extra corn syrup to add more fudginess to the brownies. 
  • For a deeper flavor, add some instant coffee powder into the brownie batter mix!
  • Experiment with different toppings- I love sprinkling some of my homemade maple candied pecans! 
  • If you don’t have heavy cream to make the chocolate frosting, you can use a mixture of whole milk and butter along with the chocolate. 

How to Make Cosmic Brownies

Start by preheating your oven at 350 F and grease your baking dish with cooking spray or butter. 

  • Step 1: Whisk butter, eggs and vanilla in a large bowl. 
  • Step 2: Add the dry ingredients-cocoa powder, sugars and corn starch to the bowl and mix well. 
  • Step 3: Pour the brownie batter into a greased baking dish and bake for 25-30 minutes or until it nearly passes the toothpick test. 
  • Step 4: For the chocolate topping, add the chocolate chips to the hot brownies as soon as it comes out of the oven. 
  • Step 5: Once the chocolate chips have melted, spread out in an even layer and sprinkle the rainbow sprinkles over the melted chocolate. 
  • Step 6: Serve warm with a scoop of vanilla ice cream or let cool.

How to Store Leftover Chocolate Cosmic Brownies

This is arguably the best part about basically all brownies – they taste just as good when kept in the fridge and eaten again a few days later. 

If you have any leftovers, just make sure you transfer them to an airtight container before you pop them in the fridge. 

Tips & Tricks

  • Add an extra egg yolk in addition to the eggs the recipe calls for, to add a bit of rich and fatty oomph to these Cosmic brownies.
  • Avoid overmixing the brownie batter. Mix it just until the batter looks uniform. 
  • Use room temperature eggs for the best texture. 
  • Use parchment paper to line the baking dish. Doing this will help you get the brownies out easily and make cleanup a breeze too! 
  • You can also add mix-ins inside the brownie batter if you want to bring a bit of variation. Chopped nuts and chocolate chunks are some good options to consider.

How to Serve Cosmic Brownies

These delicious fudgy Cosmic brownies can be enjoyed at any time of the day when you’re craving for a sweet treat. 

I love making them for potlucks or baking them over the weekend. 

You can have them as is, or pair them with a scoop of vanilla ice cream, just like I did with my dark chocolate brownies.

Recipe FAQs

How do I get the perfect, even cuts?

To get the perfect, sharp cuts on all sides, use a super sharp knife and cut the brownies in one single motion. Also remember to wipe the blades in between cuts. 

The sprinkles are sinking. What should I do?

To keep the sprinkles from sinking into the frosting, add them in towards the end, after you notice that the frosting has started to harden a bit. 

Can I make Cosmic brownies in advance?

You sure can! Bake them up to 2 days ahead of time if you’re planning on serving them for a get-together or party. Use an airtight container to refrigerate them and get them out just a few minutes before you plan to serve. 

Why are my brownies cracking?

These brownies can crack if they’re overcooked. The idea is to leave the Cosmic brownies slightly undercooked, and allow them to set and cook to perfection in the residual heat, once they’re out of the oven

Ingredients
  

  • ½ cup butter
  • ½ cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ½ cup unsweetened dark cocoa powder
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 – 1 ½ cup milk chocolate chips
  • ⅓ cup Wilton rainbow chip crunch sprinkles

Instructions
 

  • Preheat the oven to 350 degrees and prepare an 8½ x 8½ baking dish by spraying with non-stick cooking spray. Set aside.
  • In a small bowl, whisk together the flour, cocoa powder, salt, and baking soda. Set aside.
  • In a large, microwave-safe bowl, melt butter. Add the brown sugar and granulated sugar to the butter and mix well.
  • Next, add eggs and vanilla extract. Whisk until fully incorporated.
  • Add the dry ingredients into the wet ingredients and mix just until dry ingredients are combined
  • Pour batter into prepared baking dish and bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and sprinkle the chocolate chips over the hot brownies. Once melted, spread out in an even layer.
  • Sprinkle the candy sprinkles over the melted chocolate. Serve warm or let cool.
