Blueberry Danish with Cream Cheese

These blueberry danishes are made with puff pastry that forms the base of these pastries that will cradle a sweet cream cheese mixture and a homemade blueberry filling, and baked to golden perfection. A steaming hot cup of coffee and a sweet, fruity danish loaded with cream cheese. Oh, yes. Now, that’s the way to start the day. I’ve started many of my days with that wonderful sweet beginning, and I’ve been doing that since I was in college. I used to buy my pastries from the store or the local bakery, but years ago, I decided to bypass the middleman and simply make my own. I make all kinds of delicious pastries, and my favorites always involve fruit and cream cheese. Enter this delicious blueberry danish with cream cheese!

Blueberry Danish

This fruity, cream cheese-filled pastry starts with a classic, braided danish round for the base. I top it with homemade cream cheese mix and blueberry topping, then I bake it until golden. After letting it cool, I drizzle it with a simple, sweet lemon glaze. That’s all there is to it! I’m in and out of the kitchen in no time, and when I’m all done, I have the freshest, most delicious pastries in the world. I never have to look at an expiration date, and my belly is always happy!

  • Cream Cheese and Egg Yolk: Cream cheese and egg yolk give the sweet, smooth, creamy topping for the pastries.
  • Fresh Blueberries: Fresh blueberries give the blueberry filling a bright, sweet pop.
  • Lemon Juice: Lemon juice tempers the sweetness of the blueberries with a shot of tartness.
  • Lemon Juice and Powdered Sugar: These make the sweet and tangy lemon glaze.

How to Make Blueberry Danishes

Making these blueberry cream cheese pastries is much easier than you think. It’s an easy recipe from start to finish, and even beginners should have no trouble with it.

Step 1: Prep

Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

Step 2: Make the Blueberry Filling

Cook the blueberries, sugar, lemon juice, and cornstarch in a medium saucepan over medium heat, stirring continuously until the berries burst and a thick sauce forms. Remove the sauce from the heat and let it cool.

Step 3: Make the Pastries

Cut each puff pastry sheet into 8 strips. Then, pinch the ends of two strips together to create one long strip. Twist the strip until it forms a braided piece. Finally, place one end of the braided strip onto the parchment paper and wrap it around itself to form a pinwheel. Repeat until all the strips are used. Poke the center of each pinwheel 4 to 5 times with a fork.

Step 4: Make the Cream Cheese Filling

Beat the cream cheese in a medium bowl until light and fluffy. Then, add the egg yolk, sugar, vanilla, and lemon juice and beat again for two minutes.

Step 5: Top the Pastries

Add a heaping spoonful of cream cheese mixture to the center of each pastry. Then, top the cream cheese with a spoonful of the blueberry filling.

Step 6: Bake

Whisk the egg and water together in a small bowl. Then, brush it onto the pastries. Bake for 23 to 25 minutes until golden brown. Remove them from the oven and let them cool completely.

Step 7: Make the Glaze

After the pastries cool, mix the powdered sugar, lemon juice, and vanilla. Then, drizzle the glaze over the pastries. Enjoy!

Ingredients
  

Blueberry Filling

  • 1 ½ cups fresh blueberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Cream Cheese Mixture

  • 4 ounces cream cheese, room temperature
  • ¼ cup granulated sugar
  • 1 egg yolk
  • ½ teaspoon lemon juice
  • ½ teaspoon vanilla extract

Egg Wash

  • 1 large egg
  • 1 ½ teaspoon water

Glaze Drizzle

  • ½ cup powdered sugar
  • 1 ½ tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • 1 box puff pastry sheets

Instructions
 

  • Preheat the oven to 400 degrees and line a baking sheet with parchment paper. Set aside.

Blueberry Filling

  • In a medium saucepan over medium heat, add in blueberries, sugar, lemon juice, and cornstarch. Stirring continuously, cook until berries start to burst, and a thick sauce forms.
  • Remove from heat and let cool.

Pastry

  • Cut each pastry sheet into 8 strips.
  • Take two strips of puff pastry and pinch the ends together to create one long strip.
  • Twist the strip until it forms a braided piece.
  • Place one end of the long, twisted strip down onto the parchment paper and wrap the dough around it, starting in the center and creating a pinwheel base. Poke the center 4 to 5 times with a fork.

Cream Cheese Mixture

  • In a medium bowl, beat cream cheese until light and fluffy, about 2-3 minutes.
  • Add egg yolk, sugar, vanilla, and lemon juice. Beat for 2 more minutes.
  • Add a heaping spoonful of cream cheese mixture to the center of each pastry followed by a spoonful of blueberry filling.

Egg Wash

  • In a small bowl, whisk egg and water together until combined.
  • Brush easy pastry with egg wash.
  • Bake for 23-25 minutes, or until golden brown.
  • Remove from the oven and let cool.

Glaze Drizzle

  • Once the pastries have cooled, mix powdered sugar, lemon juice and vanilla together.
  • Drizzle each pastry with glaze and enjoy.
