This crock pot beef shoulder roast makes the perfect family dinner. Cubed boneless beef roast is slow-cooked with onions, enchilada sauce, salsa, jalapenos, and bold seasonings to create a super-tender and flavorful beef dish that’s perfect for feeding a crowd.

I love easy, delicious meals, especially when I’m feeding a crowd. When my kids come over to visit, I’ll usually make some kind of casserole, stew, or crock pot meal. They make it easy for me to serve something delicious while still having plenty of time with my loved ones.

One dish I really love to make is this shoulder roast. It’s a crock pot recipe, so it requires very little effort, and I love that I can serve it with a side, stuff it into tacos or burritos, or even make BBQ pulled beef out of it. I always have plenty of options in the kitchen and plenty of time with my family.

Why You’ll Love This Crock Pot Beef Shoulder Roast

  • Limited Ingredients: It only takes a handful of simple ingredients to make this recipe.
  • Easy: Just combine, cover, and cook. That’s all there is to it!
  • Versatile: It’s easy to adjust the seasonings to suit your family’s taste, and it’s great served as-is with sides or added to sandwiches, tacos, enchiladas, and more.

Ingredients

  • Boneless Beef Shoulder Roast: Shoulder roasts have the perfect amount of fat to make the beef cook up tender and juicy without being overly fatty or greasy.
  • Onions: Onions add classic bite with a touch of sweetness.
  • Jalapenos: Jalapenos add a kick of heat.
  • Salsa: Salsa adds complex flavor and liquid to help the roast cook to tender, juicy perfection. I really love using Hatch Valley Salsa from Trader Joe’s.
  • Red Enchilada Sauce: Red enchilada sauce adds a smoky, bold flavor and spicy heat.
  • Seasonings: A blend of garlic powder, paprika, pepper, and Slap Ya Mama seasoning adds even more bold flavor.

Tips

  • Choose a shoulder roast with a good amount of marbling and as little thick veins of fat as possible. This ensures a tender, juicy result without excess greasiness.
  • Keep your beef cubes between 1 to 2 inches. This is the perfect size for ultra-tender beef.
  • It’s important to line or spray your crock pot to ensure the beef doesn’t stick or burn.

Frequently Asked Questions

What is beef shoulder roast?

Beef shoulder roast is an inexpensive chuck cut. It has a good amount of marbling and fat but is still very meaty. This makes it perfect for cooking low and slow to produce incredibly tender and juicy meat.

How do I choose a good beef shoulder roast?

Look for a shoulder roast with good marbling, a bright red color, a firm texture, and a moderate amount of fat throughout. This ensures tender, juicy meat that isn’t overly greasy.

What are the best beef cuts for slow cooking?

When choosing a beef cut for slow cooking, look for anything with chuck, shoulder, rump, or round in the name. These are cuts that typically have a good amount of fat and are considered “tougher”. The fat breaks down while the meat slowly cooks, tenderizing the tough meat and creating a tender, juicy final product.
